I made the best shrimp salad sandwich for dinner..
marinate cleaned and deveined shrimp in white vinegar and hot sauce... Throw shrimp to cook in a hot frying pan sprayed with PAM and 2 crushed garlic cloves.. While shrimp is cooking, boil 1 egg. Once shrimp & boiled egg have cooled, cut them into cubed pieces and mix with 1 tbsp of light mayo.
Serve on two slices of toasted whole wheat bread.
This was so unbeliveable...I want to make it every week...the best part it is only 350 calories...

To roast the shrimp, soak them in a light brine for about 5 minutes. Line a deep glass baking dish with foil, sprinkle with EVOO. Add shrimp & toss to coat (keeps them from drying out without adding a lot of fat). If I have parboiled or leftover veggies (onions, peppers, corn) I add those to the pan as well.
I heat the oven to 350 degrees, pop them in and then turn the heat off. After the first 5 minutes, check every 3 minutes or so. They'll be done in less than 10 minutes, depending on how hot your oven runs.

Marinate them in lemon juice, minced garlic and ginger, red chillies (or chilli paste) and a bit of soy sauce. Sautee them (using Pam) and serve them over a bed of brown rice or whole wheat pasta... you can add chppoed veggies to tyhe shrimp as well.
Shell, devein and boil prawns until cooked, let them cool. Cube red tomatoes, white onion, parsley and jalapeno peppers... mixed them all together. Mix, ketchup, tabasco sauce, pepper and lime juice and add to the vegetable mix, finally add the cooled prawns and mix... salt to taste. Serve with tortilla chips or salted crackers
Shell and devein prawns, marinate in Miso paste and soy sauce, sautee them or grill them, serve with steamed japanese rice

I sautee mine in a little bit of butter and garlic, then when they are just about cooked, and then squeeze some lemon or lime juice over them, cover it, and steam for about 2 minutes.
Then I just eat them plain. Shrimp is a GREAT diet food- you can eat almost a million and eat like... 10 calories. :)

| Thanks for the shrimp ideas. The roasted shrimp sound good but hiw do you roast them - i.e. what temperature and for how long? They cook so quickly and go from just right to dry so quickly then it seems like that would be tricky.

We do a lot of shrimp too (although I cheat and buy the bulk deveined, deshelled, uncooked shrimp at Sam's Club - 2 lb. for under $12). I always mean to do a salad (preferably one that looks as yummy as yours sounds!!!) but those leftover shrimp seem to disappear quickly with the boys in the house!
Our favorites - thai shrimp, pepper shrimp, seafood pots, shrimp ka bobs, mandarin shrimp and roasted shrimp (if you haven't tried roasting them - OMGolly, they are GOOD)!

| If you are having company and are in a "non-diet" mode that night try my recipe for Jumbo shrimp alfredo. It's in the recipe board.

I take raw shrimp, saute in a little olive oil and garlic and serve it over angel hair pasta for some Shrimp Scampi !! Great for dinner. *************
You can also make Shrimp Pasta Salad. Take cooked shrimp toss with cooked small shell shaped pasta, chopped scallions and a litle bit of mayo. Trick is a little bit of mayo, too much is not good. I think with WW 1 cup of pasta is 4 points and mayo is 1 point per tablespoon and shrimp is low in points too. This will make a great lunch and create jealously with your coworkers !!

| I bought a pound of shrimp over the weekend and have made three different delicious meals from it. I boiled the shrimp in their shells very quickly until they just turned pink and then put them in cold water. The most work was taking the shells off and deveining them. Once that was done, I divided the cooked shrimp into zip lock bags. Today I had a shrimp salad for lunch. I just grabbed whatever i had in my refrigerator, took the food with me and made the salad in the kitchen at work. It included a yellow pepper, hot red peppers, gherkins, sliced Tomatoes and a little onion with a little creamy dressing plus the cut up shrimp. My co-workers oohed and aahed over it because the different colors made it quite attractive. One day I made a simple chowder with shrimp, corn and canned Tomatoes mixed with fat free half and half. One day I made an easy pad thai by mixing cooked buckwheat noodles and peanut flour with the shrimp. Living alone, I've never been much of a cook but since starting Sparks and joining weight watchers I find that cooking and trying new recipes is something I really enjoy.
