I've found speaking of baked potatoes (and to a certain extent mashed potatoes) I can make them yummy without all the sour cream, butter, etc. By being adventurous. I read in a book to try baked potatoes with salsa. Loved it!!1 I've also used mustard, honey mustard, etc. Or if i want a creamy taste i add a little low-fat dressing. Hope that helps.

My personal trainer suggested I change to eating red potatos because they have less starch and they breakdown and digest better than regular potatos. I use red potatos in everything, mashed potatos with the skins is one of my favorites, you just gotta watch what goes into them. If its the potatos themselves that you like and not all the "stuff" on them, I'd suggest trying baked or broiled chunks of potatos in oil and light seasonings.

OMG...........why would anyone want to take all the starch out of potatoes, that's what makes them potatoes and adds the flavor..instead of trying to get the starch out I agree that Yukon gold which tend to have a buttery taste to them and red potatoes all with skins on are a wise choice, baked with salsa or fat free sour cream and chives or mashed with fat free or lowfat sour cream and milk...minced garlic and any other imaginable spice is a good choice. Try making twice baked using low fat or fat free milk, fat free or lowfat sour cream and fat free/lowfat shredded cheese yummy....okay now ya all have done it ...I want some potatoe..

P.S. don't forget when boiled some of the starch is lost,,,,,and that's a very good thing

I love mashed potatoes too. In fact, they have probably been a big part of my downfall. I have been happy that mashed potatoes have been showing up on my meal plans. What has been most helpful for me is to only make one medium or two very small potatoes to mash. Otherwise, I would eat myself sick on them. I also only used milk last time instead of using butter as well. Mrs. Dash has also been my fall back since I started. Since it has no sodium, it doesn't hurt to add it to everything.

Speaking of potatoes....my trainer at the gym told me to use Yukon Gold instead of Idaho's. They are less starchy. They taste very good mashed. My other favorite and better than Idaho is Red Skins. They make good potato salad with the skins included.

I just made mashed potatoes last night. I used to make them with butter and sour cream but I have found that "I Can't Believe It's not Butter" lives up to its name! I boiled them, smash them, add a little (i would estimate 1/4 cup 1%milk for 4 small potatoes)garlic salt, pepper, and as many sprays of I can't believe its not butter it takes to make it taste buttery and oh so good. I was shocked to discover just how low calorie potatoes are when they aren't smothered in mayo, sour cream and the works. My new way tastes just like garlic mashed potatoes at my favorite eatery!

i love mashed potatoes but was struggling with making them taste good and not be so bland, without the butter and sour cream and everything. i have foudn that they can be really tasty if you sautee some minced onion in evoo, then add that and a dollop of fat free cream cheese with some spices when you mash it up, it makes it rich and tasty without adding too much fat.

potatoes are basically a complex (starchy) carbohydrate like rice and pasta so really they are fine. BUT always try are keep the skins so eat them baked, boiled in skins, roasted in wedges.... get the idea! I love mashed potatoes too but the problem is when you add butter, milk etc. So either boil mash and then add just fat free or nearly fat free milk to add creamyness. you ca also add other flavours, garlic and herbs, cilantro/coriander leaf, or even just plenty of black pepper! hope this helps?
