| I like wild rice. I use part water and part orange juice and add dried cranberries, slivered almonds and green onions at the end.

| I never knew there were so many who love salmon. I drive our friends nuts when we go out, I always want to go to a good seafood place, and I invariably order salmon, and I cook salmon at home once a week. As you all have demonstrated, almost anything goes with it. I had it on the grill tonight with a cranberry/mustard sauce brushed on, served it with corn-on-the-cob and a tossed salad. To die for! | We like cous cous with our salmon. We use the regular recipe on the box, but substitute orange juice for water. Then throw in some dried cherries or dried cranberries and let them soak a bit. Bring orange juice mixture to boil. Throw in cous cous and stir quickly. Off heat and let sit 5 minutes covered. Then using fork fluff mixture and serve. You can also toss in some toasted nuts if you like. We usually accompany with a green vegetable as well.

| I had some delicious salmon the other day with asparagus and one sliced roast potato, it was delicious!

I would like fresh sliced Tomatoes with a thin slice of fresh buffalo mozzerella placed alternately on the plate,a whole basil leaf tucked between the layers served with a low cal baslamic vinegrete. Asperagus is the classic vegetable,olive oil and lemon. If you save the salmon skin you can grill it till lightly crisped.Cut it into thin strips and garnish the salmon with it.It taste like a good smoked bacon. We tend to eat a lot of fish or seafood and I have become addicted to Arnold Palmer Salad as the side dish with it. We modify the recipe a bit to wipe away the calories but its basically this:
1-2 stalk Romaine lettuce - chopped 2-4 Tomatoes - diced Hormel Real Crumbled Bacon (top the salad with 2 tablespoons worth) 1-2 Avocado - fresh, diced
Put the lettuce, Tomatoes and avocado into the salad bowl and toss lightly with Ranch (we use fat-free) dressing. After the salad is thoroughly mixed, top with the crumbled bacon (2 servings per bowl = 50 calories) and you are ready to go.
You really can make this to taste which is the reason I left the amounts in ranges rather than specific numbers. The best part about this dish, no cooking anything and it takes less than 5 minutes to throw together.

| Foodnetwork.com has a great way to fix salmon and a side dish that you will love. It's by the Barefoot Contessa. I don't know about the calorie content but it's a great dish that I've prepared several times. My husband loves it.

Glad to hear that, Catrina! I've got a really good recipe - haven't had it in a couple years, but when my daughter still lived at home, it was a staple around here.
Grilled Salmon with Creamy Dijon Sauce 4 servings
1/2 cup non-fat mayonnaise 1/4 cup Dijon mustard 1 tsp. dried dill weed 1/3 cup buttermilk - lowfat 1 lb. salmon fillets
Whisk mayo, mustard and dill until smooth in small bowl. Slowly whisk in buttermilk. Cover and refrigerate at least 1 hour to blend flavors. Grill the salmon. Serve cold sauce over hot grilled salmon.
Calories: 253 carbs: 5 fat: 10 protein: 30

wow, thank you everyone.
Becky, I LOVED it. I had to ask the guy behind the meat counter which kind of salmon was best to buy, he said the wild...so we did and then I read that it's the best to buy for taste as well as nutrients. So yay. :) It was an awesome recipe and I thought it was really easy and quick to make. If anyone is interested, go to the spark recipies page and look up the salmon with tomato orange basil sauce. SOOO good. though my hubby accidentally got a grapefruit instead. lol It made no difference though, just tasted the citrus flavor. Anyway, I ended up serving it with rice and it was good but next time I make it (which is going to be tomorrow probably...for my sister) I'll try some of the ideas on here.

How about steamed broccoli with a squeeze of lemon.
Or a side of mashed potatotes. (Actually, when I do salmon, I usually have both those, and a salad.)
You could make the mashed potatoes extra fancy and add garlic.

| Spinach sauteed in garlic or a tomato salad or couscous.

| I serve my salmon with veggies and quinoa. Quinoa is a complete protein, hard to find in the grain world and super tasty. It has a nice peppery finish that goes well with the salmon. Much more texture and flavor than rice, sometimes hard to find though.

Hi everyone, I'm cooking salmon for the first time tonight and I just have no clue what to make with it.
The salmon I'm making will be cooked in the oven and then a Tomato Orange Basil sauce to go over it. (actually a recipe I got off sparkrecipies) I didn't even think about the side dish till now. lol oops.
Please if anyone knows what might be good....
This is my first attempt at making salmon and also my first attempt in eating it.
