Storing olive oil

Thanks, that's a great description, Emsr2d2. Unfortunately, I am now kind of concerned about mine. I get it at Sam's Club and the time before this that I got it, the bottle (gallon) had a good tight screw cap. This time however, its a very loose, non-screw type. I keep mine in a closet in the kitchen away from the stove and all, but I don't have air conditioning and its pretty hot during the summer. Just HOW cool is "cool"? Is room temp in an un-air conditioned house cool enough?

Yes, as far as I've always been told keep it in a dark coloured bottle (like the ones it's normally sold in), and keep that hidden away in a kitchen cupboard!

Found this on the net:

"When buying olive oil you will want to obtain a high quality EXTRA VIRGIN oil. The oil that comes from the first "pressing" of the olive, is extracted without using heat (a cold press) or chemicals, and has no "off" flavors is awarded "extra virgin" status. The less the olive oil is handled, the closer to its natural state, the better the oil. If the olive oil meets all the criteria, it can be designated as "extra virgin".
Resist the temptation to place your beautiful bottle of olive oil on the windowsill. Light and heat are the #1 enemy of oil. Keep olive oil in a cool and dark place, tightly sealed. Oxygen promotes rancidity. olive oil is like other oils and can easily go rancid when exposed to air, light or high temperatures." (From healingdaily.com)

I guess its something i've always seen my grandmother do, but i keep mine stored in a dark colored glass container.

My Grandmother and Mother (and now myself) store our olive oil in a kitchen cabinet. Never put it in the fridge or anywhere near heat (like next to a stove).
