I dont think i have ever tried purple ones... but I do love red potatoes. The consistency is much more firm then ordinary potatoes and they have more flavor imho.

We have salmon about twice a week, my family's most favorite dinner. Rice (any kind; white, brown, wilk, mixed) seems to go the best with salmon. Then I just add whatever fruit or veg I have around (tonight, it's broccoli) for a great dinner.

Have tried many recipes for salmon, the best for my family is: Preheat oven to 400F. Line baking sheet with foil. Spray olive oil on pan (or pour a little in and rub on fish). Spray some oil on fish. Sprinkle with some spices your family likes (our favorite is "Tony Chachere's Original Creole Seasoning" which is great on everything). You can use pepper and some garlic salt, or some dill and pepper. Bake 20-25min. Enjoy.

I love purple potatoes! I got some at a Farmer's Market a few years back and saved some to grow - and now have them every year.

For Independence Day I like to make my potato salad using red skinned, russet, and purple potatoes, to make a red, white and blue potato salad!

It's very festive, and as each kind of potato has a different starch content, it lends an interesting texture to the salad.

My Dad LOVES purple potatoes but I rarely find them here...until yesterday! Found some and can't wait to mash em up or make baked chips. So pretty! :-)

rice pilaf is generally the "traditional" side dish with salmon. Wild rice works well too. Glazed carrots would go well with your sauce, and asparagus would look pretty as well.

Enjoy! Salmon is one of my favorites.

I used to work at a potato factory (like ONE month)...anyways, just after I left there (my sister is the office manager) they threw away all of their purple potatoes because no one was in the market for them here. My sister brought home a box though, and we mashed them.....they were good (tasted just like regular) and you are right, really pretty looking. Sooo bizarre.

I was hoping to get some advice ...maybe someone in here can help. I was trying to figure out what would go good as a side dish with Salmon in a tomato Orange basil sauce. This will be our, well my, first time eating salmon and I have no clue what to make with it.

Yes! I found these great potatoes at our local farm stand this afternoon and cooked them up when I got home.

They are a BEAUTIFUL, deep purple color. According to the stand attendant, diabetics can eat them because they have a low glycemic impact, they contain as much antioxidants as blueberries, and 2x the potassium of bananas.

I made mashed potatoes with mine, and you never SAW such a pretty color. They taste just like regular potaotes.
