There's not a lot to the standard, white, button mushroom. But other mushrooms like crimini, portobello, oyster, shiitake, straw ... they all have different nutritional amounts, and WAY more than white buttons - and lots more flavor too!
I like mushrooms, and used white ones all the time. But then I tried crimini. Man, are those tasty! I really like portobellos and shiitakes too, and can't imagine making an Asian stir-fry without straw mushrooms.
I also can't imagine going back to using white buttons anymore. They're nice, but why have that when you can have more flavor and texture - and more nutrition too?
As for recipes, it really depends - most of the recipes I have the mushrooms don't add a singificant element to the overall dish - you could easily not use them and not change the dish by much. But for other recipes you do need them.
If you really don't like them, don't eat them - but give some of the other varieties a try. You might find you like them after all.

They are very low in calories (unless really fried in oil or butter), they have protein and minerals. When considering nutritional value it is really only fair to consider it relative to their "dry weight" because they are mostly water.
As far as substitutes, there really aren't any. It kind of depends upon the recipe, if it is already flavorful, don't use mushrooms. If it is pretty bland add whatever flavors you like (onions, garlic, herbs, etc...).

Does anyone know a good substitute for mushrooms? I just don't get get mushrooms. To me they taste like cardboard. Do they have any nutritional value?
