I took one boneless chicken breast, sliced it thin and saute'd it with onions, green peppers, mushrooms and a couple of tablespoons of teryaki sauce. I measured 1/2 cup of brown rice and poured the mix over the top.........yum

| TODAY I USED MY SLOW COOKER, I PUT CHICKEN GUIZZARD, AND ADDED SOME GREEN PEPPERS FOR SEASONING. THEN I SEASONED IT WITH salt AND MEAT SEASONING AND ADDED A CUP OF water AND COOKED ON 4/5 FOR 3 HOURS, THEN LOWERED IT TO 2/5 AND COOKED ABOUT ANOTHER 2-3 HOURS. I BOILED UP SOME RED POTATOES AND CUT UP SOME Tomatoes AND CUCUMBERS AND MELON. GREAT MEAL, IT WAS DELICIOUS.

I am thinking of either making spaghetti or some sort of pasta. I like Soba noodles, my husband doesn't. kids will eat them.
We bought a big bag of asparagus (like 2 pounds) and have been grilling them. I squeeze fresh lemon and sprinkle sea salt (you could use kosher salt) on them, then grill. YUMMY!
I might make that for lunch too. Oh and yesterday I added some cold ones from the night before to my salad. Very good with the lemon flavor.

Last night I made beef stroganoff as a sort of side dish, and steamed zucchini and a tossed green salad.
The night before I tried the Chicken with Apricot Sauce recipe I found in the Spark recipes - with sides of honey dew melon and... um... I forget what vegetable ! LOL ! ....but it was good.

Portobello mushrooms pizza:
1 whole portobello mushroom, stem removed spritz of pam cooking spray on each side of shroom 1 low fat string cheese (cut into "medalions" onion, bell pepper, garlic, jalapeno, the kitchen sink...you get the idea...
pre heat oven to 375 f, put oil spritzed shroom on baking pan and bake for 3 minutes, take out of oven, add cheese and ingredients, put back in oven for 15 minutes or until shroom is to consistency of choice.
Yum! depending on what you put on it, its under 200 cals. And, if you serve it to a hot guy, he may propose marriage.
***WARNING*** marriage proposal not guaranteed.
