If you look under the Diet and Nutrition message board, you can find a thread labled "I want to stop eating meat" and there are LOTS of recipes under that for things to do with lentils.
I've got two really great recipes, one for lentil rice casserole, and one for lentil burgers. Both of them my kids love (except one, but he doesn't eat anything).
If you can't find them, email me and I'll send them to you.

| I love making lentil salads. I cook them until tender and let cool. Then I add cucumbers, hearts of palm trees, roasted red peppers, celery, grated carrots and the dressing you like and voila!

| Three basic kinds of lentils, red, green, brown. The red ones dissolve down to grainy mush when cooked, the green and brown hold their shape. If a recipe doesn't specify it means you can use the green or brown, but not likely the red. Lentil soup typically uses red and brown.

how to cook them:
rinse them (remove any specks of dirt or stones), boil them until they are tender.
Easy recipes: cook some, add spices, onions and serve with rice. (spice like curry or go for beans and rice, or whatever)
I will see if I can find my lentil burger recipe.

First queston, how do you cook lentils? Second question, what are some fast recipies that I can make them with? I am a vegtarian so no meat please.
