I absolutely LOVE to experiment in the kitchen, but today was extra yummy. Rather than posting all of mine here, I put them up on www.SparkRecipes.com.
The ones I just posted were: Tofu Marinade, Whole Wheat Soymilk Crepes, a vegan Nutella, Tofu Cream Cheese, Easy Trail Mix, and Fresh Strawberry Balsamic Dressing. (I have a zillion others from previous times if you just click on my username to see the ones I posted.)
For breakfast, I had 2 crepes with a little bit of the vegan Nutella (a little goes a looooong way), some banana slices, and Fat Free Cool Whip= THE BEST!!!
Then, before lunch, I had a light snack of the trail mix.
For my snack, which I'm eating right now -YUM-, I marinated a few slices of silken tofu (1 serving) in the marinate. I took one of my leftover crepes, put it in a muffin tin (it was actually a silicon muffin cup- amazing!) and put 1/2 the tofu in it (I ate the other half raw!). Then to get some veggies, I ripped up some napa cabbage and stuck it on top. I baked itfor maybe 10-15 minutes and the crepe came out perfectly crispy. I would have loved to throw some sesame seeds on top, but I couldn't find any so I just used peanuts, which worked just as well!
(I plan on having the cream cheese on my bagel for breakfast tomorrow and dressing over my salad- I can't wait!)
THESE ARE AMAZING, THEY'RE GOING TO BECOME STAPLES OF MY DIET!!! You have to try them!
