| I have a couple of spice mixtues I got at Sam's Club. One is the hidden valley ranch which is great mix with mashed potatos for something a little different. I also have a citrus seasoning blend that is great on chicken and fish. My favorite is a 6 pepper blend. I am trying to learn how to cook. I printed out some recipes and I can't wait to start cooking.

| Dill is a herb not a spice.....but if we are talking about herbs....try oregano....great in salads.and BBQ marinades

| My favorite spice is Dill. I put it in my salad and on baked chicken. I also use a lot of Tony's Cajun Seasoning. I use it on about 95% of my dishes.

ARCHITRAZZ2181 I have never tried to dry my herbs, because I like to keep as much fresh as I can, I only have a small garden off of my patio. But if you want to start to grow them fresh, you could use large flower pot for rosemary, basil I even grow my peppers in pots, now the red peppers I do dry them out, I string them up and hang in a dark place. Hope this has helped.

| Just about everything, I have two shelves in my kitchen just for spices and their packed. I grow my own rosemary, basil, parsley, peppers,I love cooking with fresh herbs and it's much cheaper to grow them.

| Just about everything I cook starts with fresh garlic (it was a major crisis when my garlic press broke recently). Other than that, cumin, chili powder, and crushed red pepper are my favorites.

Favorite spices. . .of course garlic. But also herbs de provence, cumin, rosemary, roasted garlic and red pepper (I think McCormick's makes it), spicy pepper mixture.
Mix and match. .its the spice of life :-)

Would love that chili recipe with the cocoa....
oH & I LOVE LOVE LOVE garlic TOO!! I use a brand called Adobo or Adobe (my sister always laughs at me cos I call it one but it's the other..mexican blend of garlic & other spices.. I use that instead of garlic or in addition to if something calls for garlic.. I like Curry too, but my family doesn't so can't do too many things with that.

| What are some good spices to use to jazz up chicken? I'm getting a bit bored with plain chicken breasts.

| When I wash, put them between damp paper towels & zip lock bags, they last 1 1/2 to 2 weeks in the frig. They stay fresh and are ready to use as soon as you need them. garlic I keep in the little jar that has holes for air circulation (garlic jar). I keep it next to the stove. I use a garlic press that minces the garlic and leaves the skins in the press. Easy to use since I don't have to peel them. Sometimes I have my husband or daughter press them if they are big pieces of garlic and I'm not doing well that day.

| How long can you keep fresh herbs in the fridge? Mine always wind up wilted and I don't want to use them after a few days - it feels like a waste of money. If I just leave them out and they dry, then I have homemade dried spices? I haven't really tried that either though...

I also think that the fresher the better. I used to buy all the dried herbs. Now the grocery stores are giving us such wonderful varities of fruits, vegetables and herbs. I bring the vegetables and herbs home and clean them right away. The herbs I wash and package between damp papertowels and then put them in zip lock bags to keep them fresh. They all go into the frig and are ready for when I need them. Sometimes I have to sit down and rest in between cleaning but it makes life so much easier when I prepare meals during the week.

WANNABESKINNY9 - I used to think the same way about paprika until I started getting my spices online and found there is a difference between "fresh" paprika and what all of us usually find in the grocery stores that may have been there a while.
It seems to be that way with alot of herbs and spices --- the fresher the better.

| One of my favorite things to cook with that adds such great flavor is Hidden Valley Ranch powdered mix. I found a big jar of it rather than the small packets in Sam's Club and bought it, to make dressing with. Then as I incorporated more healthy ways of cooking, which means no butter, very small amounts of olive oil and cooking spray instead of other greases, I searched for ways to make my dishes more flavorful. In searching the spice cabinet, I saw my ranch powder and sprinkled it on a chicken breast as it cooked . It was SO good that I started sprinkling it on pork chops, steaks, seafood...all of it turned out fantastic! And the best part is it is only 5 calories a teaspoon! Give it a try if you are looking for a new flavor :)

Fresh Garlic Thyme on potatoes and veggies Oregano Fresh Basil-we grow it outside and put it on pasta and pizza, I can't believe I almost forgot it!
and McCormick (spelling?) makes a grinder with Italian seasoning in it....I use it on so many things. It's GREAT!

| My favorite spice is smoky paprika - I use it in everything! It add a nice bbq smoky flavor to anything you cook. If you get it, make sure to get a good brand and replace it often as it can turn quickly!

depending on how much cocoa you add, is how "mole"ish the sauce gets.
for a basic red chili that makes 8 servings or so- I'll probably add in a tbs or two of unsweetened cocoa powder, it really does a nice job of balancing out the heat of the cayenne pepper... it complements it well

| My favorite spice is cinnamon! :) It's great on fruit or on toast...but I also use a bit in my stuffed green peppers. It really gives great pizzazz to tomato sauce. It's great in spaghetti sauce too. :) I also sprinkle a bit in my hot tea.

| cocoa powder in chili is awesome... if you're using unsweetened chocolate it's not sweet and adds a bunch of flavor to tomato sauces..

Love garlic, dill, black pepper. Fantastic on potatoes, pasta, and fish.
We also use a blend of chili powder, curry, salt (!) and pepper. It's awesome for pork loin.
I also use cinnamon in odd things because my mom always did - like spaghetti sauce and chili. Side note: at the deli I worked at as a teenage, my boss put cocoa (yes, chocolate) in the chili - it was awesome!
Montreal Steak seasoning is also fantastic!

I love fresh ground nutmeg. Also dill is something I use a lot. Rosemary has a great flavor which I love. I guess those are my favorites. Oh, and I use fresh ground black pepper on just about absolutely everything!

I love Chinese 5-spice, I sprinkle it on top of pork marinated in hoisin or teriyaki sauce (or both!) just before grilling it.
Tarragon when fresh has sort of a licorice taste to it...I've never used the dried herb, but sometimes I put fresh tarragon in salads for a different flavor.

Same here, my family's HUGE fans of garlic, we add it to just about everything.
One all-purpose one that goes great with just about anything is Mrs. Dash. I'm not sure if that's the entire name of it, but that's what I always call it. It's the one with the yellow cover. You definitely should try it!
