Okay, here's what I ended up with. I consulted dozens of other granola recipes until I finally made a decision on what to do. It doesn't have much in common with the original recipe, though.

Ingredients:
2 1/2 cups old fashioned oats
1 cup whole wheat flour
1 tsp baking soda
1 tsp vanilla extract
3/4 cup shredded coconut
4 oz applesauce
2 1/2 tbsp flaxseed
1/4 cup honey
1/3 cup packed brown sugar
2 oz chopped pecans
2 oz slivered almonds.

Preheat oven to 325 F. Lightly grease one 9x13 inch pan.
In a large mixing bowl combine the oats, flour, baking soda, vanilla, applesauce, flaxseed, honey and brown sugar. Stir in nuts.
Lightly press mixture into the prepared pan. Bake at 325 F for about 20 minutes. Let cool for 10 minutes, then cut into bars. Let bars cool completely in pan before removing or serving.
Makes 24 bars. Each bar hast 120 calories, 5g fat, 18g carbohydrates, 2g fiber, 8g sugar, 3g protein.

We use that all the time, the butter is great. It's like the cheap version of "I can't believe it's not butter", isn't it?
I think I will go the apple sauce route and maybe also buy some honey to replace the sugar (or at least some of it)

I bought some light butter at wal-mart the other day. 50 calories for 1 Tablespoon!! Haven't tasted it yet but it's got to be at least as good as margarine!

Thanks, I will let you know how they turn out, I will have to go shopping for all the ingredients first, though. LOL

I'm not sure how this is going to turn out, but here it goes:

2 1/4 cups QuakerŽ Oats old fashioned
1 cup all-purpose flour
1 cup whole wheat flour
3/4 cups firmly packed brown sugar
5 packets Splenda
1 teaspoon baking soda
12 tablespoons I Can't Believe It's Not Butter, melted
1/3 cup Sugar free maple sryup
1 egg white, lightly beaten
1 teaspoon vanilla extract

Topping:
1 1/2 cups chopped pecans (about 6-ounces)
1/8 cup firmly packed brown sugar
2 packets Splenda
1/3 cup Sugar free maple syrup

There! Not sure how that's going to turn out, but that's how I usually make my healthy substitutions. Feel free to add another packet of Splenda to both the topping and bar since I left one out since they're EXTRA sweet. If you try this, tell me how it turns out, it sounds delicious!

i know this is not for a bar... but muffins are a good thing too if they are made right... this is the link to a site i found that has a lot of nice recipes that may give ya some ideas

I read somewhere, but haven't quite tried this that you can use egg whites instead of butter for a granola bar type recipe to hold it together. I tried this for an apple crisp, not a granola bar and worked very well.

Oh and I love the Maple Grove butter flavored sugar free maple syrup. Tastes great, I don't miss the sugar in it one bit.

For the flour maybe consider the White Whole Wheat flour. I got some semi-recently at one of the Super Walmarts for a very reasonable price.

Thanks for the tip. Is there anything I can do about the butter? Is it possible to replace all the butter with applesauce?

Instead of using maple syrup, could you use Mapeleine or maple extract? They also have brown sugar splenda.

I was online looking for a maple oatmeal bar because my husband loves maple oatmeal but doesn't always have time in the morning to prepare and eat his breakfast. So I was thinking that I could just make him some bars that he could easily take with him and eat whenever he has time. BUT, they need to be healthy, too. I found this recipe but I need some help healthifying it, it has too much butter in it for my taste but I'm not sure if I can substitute it all with applesauce... Maybe one of you has more experience? Anyway, here's the recipe:

2 1/4 cups QuakerŽ Oats (quick OR old fashioned, uncooked) - I have old fashioned oats
2 cups all-purpose flour - I was thinking about half white/half whole wheat flour
1 1/2 cups firmly packed brown sugar
3/4 cup shredded coconut (optional)
1 teaspoon baking soda
1 teaspoon salt (optional)
12 tablespoons (1 1/2 sticks) margarine OR butter, melted
1/3 cup Aunt JemimaŽ Syrup - looking for either real maple syrup or a sugar free version
1 large egg, lightly beaten - I will use two egg whites instead.
1 teaspoon vanilla extract

Topping:
1 1/2 cups chopped pecans (about 6-ounces)
1/4 cup firmly packed brown sugar
1/3 cup Aunt JemimaŽ Syrup - looking for either real maple syrup or a sugar free version


. 1 Heat oven to 350°F. Lightly spray 13 x 9-inch baking pan with cooking spray.
. 2 For bars, combine oats, flour, sugar, coconut, if desired, baking soda and salt in large bowl;
mix well. In small bowl, combine butter, syrup, egg and vanilla; mix well. Add to oat mixture;
mix well. (Dough will be stiff.) Press dough evenly onto bottom of pan.
. 3 For topping, combine pecans and sugar in small bowl; mix well. Sprinkle evenly over dough,
pressing down lightly. Drizzle evenly with syrup.
. 4 Bake 35 to 38 minutes or until edges are set but center is soft. (Do not overbake.) Cool
completely in pan on wire rack. Cut into bars. Store tightly covered.
Makes 32 bars.
