Bean and Lentil Pate'

I literally just made this and it was delicious!

Ingredients:

4 large mushroom heads
1 medium onion
1 cup bread crumbs
1 egg
2-3 crushed garlic cloves
4 tablespoons stock (chick or beef)
Approx. 14 oz. mixed cooked beans and lentils
1-2 tablespoon balsamic vinaigrette
Assorted seasoning

1. Soak beans and lentils for 12 hours then cook.
2. Chop onion and mushrooms and add to small pan low to medium heat with the chicken or beef stock.
3. Puree beans, lentils, mushrooms, and onion and mix in a bowl along with the bread crumbs, egg, and seasonings to include the balsamic vinaigrette .
4. In a small loaf pan, add the pate' and cook in the oven for 35 minutes at 425-450 degrees.
5. Best over garlic bread or whole wheat bread.

Yield is enough for 10-12 people at 2 slices of bread each. WOW!!

*Prep. time = 10 minutes; A great recipe ready in about an hour (after beans/lentils have soaked and cooked of course)
