Stay positive! Look at it this way . . . many people work full time jobs - you and your fiance just work a different schedule that some of the rest of us. At least your schedules aren't opposite of each other!

Remember the saying, "Can't never could". Sorry to be such a devil's advocate, but as long as you find it impossible, it will be impossible. Empower yourself!

I work full time and have both high school and kindergarten kids, so I understand the busy schedule piece. I try to build meals in advance (weekly meal plan) and cook a lot of the main courses in advance. I try to plan things that we can heat up portions of sauces, rather than whole meals. We also eat a LOT of fresh fruit & veggies (raw or lightly steamed) as sides.

This week on Sunday I roasted corn on the cob & cauliflower, the leftovers went into a veggie saute that I toss in a saute pan just to heat through with onions, garlic, zucchini and cilantro. AWESOME over whole wheat pasta as a meal but works great as a side too.

I roasted shrimp on skewers (Sunday lunch), a small piece of salmon and some frozen crab legs. The leftover shrimp and the other seafood will be added to a tabikio lime sauce and served over pasta tomorrow. When my big guy can't eat with us, I don't make his pasta -- quick enough to prepare his single serving when he does make it home.

I grilled the steak for fajitas, which will be wrapped in lettuce for me, flour tortillas for the kids. Quick, quick heat up in the microwave so you only heat what you're going to eat.

I also grilled tuna (Sunday dinner) and sausage (Monday dinner with homemade mac & cheese).

Another staple would be to use the crock pot (usually a meal a week). Hope this gave you some ideas you could use.

I work at a hospital 3pm - 11pm full time and my fiancee works at a factory 730pm - 6am (10hr shifts) 4 days a week. We are always on the go, never have time to cook and sit together to eat. I cook he gets leftovers.

What can I cook that is both healthy and quick that can be reheated later? I need ideas!!!

I feel like I'll NEVER be able to lose the weight I want to lose!!! It seems impossible to cook healthy in a hurry.
