Have you tried adding dried fruit to your couscous...raisens, currants, or cranberries. also slivered almonds

Hi!

Didn't think to look at the date on your question about couscous. You've probably got your answer but I use it in salads and mix steamed vegetables with it too. It reminds me of grits because you can mix it with most anything because it doesn't have a strong flavor. I like the texture it adds.

These all sound like great ideas for couscous. Thanks! I actually just bought some for the first time Sunday on impulse and just used vegetable broth to make it. It didn't occur to me to do other things and add stuff.

For couscous, I like to throw finely chopped green onions, minced garlic, and pinches of spices or fresh herbs into the water before the couscous goes in. And like someone else mentioned earlier, I often mix in boullion as well.

My kids have been loving fruit lately...I put out a plate of it and it disappears...I'm pretty happy about that. And I've switched their chips from regular doritos to the baked variety.

You are a better woman than me. The only thing that I bring into the house is 100 calorie packs now. If he wants anything else he can buy it and keep it in his truck or at work. My girls are still young so they don't really know the difference. The positive side for them is that I have been "trying" for the most part to eat healthy since their births. The actually go for the fresh veggies before the chips at a party. It's really a good feeling to know that I've done ok in that department so far.

Me too and he demands that all the goodies, snacks, etc be kept in the house, even though I can't have them. It's getting awfully hard to resist the kit kat in the pantry.

I have a rather large appetite as well. I also have a husband who is a lot bigger than me. More than a foot taller and for a while I was trying to keep up with him. Unfortanltey, that didn't work so well for me.

I love it because you can eat a lot in a serving...and I'm all about foods that I can eat a lot of in a serving..lol...I have an insanely large appetite.

I sautee a bit of onion and portabello mushroom in Pam and then stir into the boiling water as I add the couscous to it. Let sit 5 minutes and enjoy.

I saw this message board a couple of days ago and thought that Couscous might be a good choice for my family. Well, I made it last night for dinner...very plain b/c they are picky eaters and WOW my family like it. Even the meat and potatoes guy! I intend on making it again soon but maybe adding some other things to it. Thanks so much for the idea!

I made it with coconut milk and served with curried chicken with more coconut milk (light), shredded carrots & raisins. Sounds weird but was very good. I think I Found the recipe on Cooking Light.

I did the same thing. I've made a couple of things with mixed results. The recipe, link below, is more of a salad that happens to use couscous. It is very tasty.

One of my absolute favorites is to mix up some couscous with chopped tomatos, pine nuts, capers and parmesan.

Type it into the recipe finder on epicurious.com and you'll get lots of interesting ideas. You can usually reduce the butter in their recipes or substitute a healthy oil like olive or canola and get good results.

You can mix it with diced veggies, or raisins or currants, or dried fruits, cook with water or broth. lots of possibilities.
