We often make a kind of "ice cream" that is really yummy and similar to a vegan recipe a friend makes. It is a great way to use up bananas that have gone a little too ripe.
Vegan Ice Cream
1/2 cup frozen banana slices 1/2 cup vanilla soy milk
In a Magic Bullet blender or small food processor, process the two ingredients till they form a frozen blend. Makes 2 delicious servings.
There is a lot of opportunity to experiment, too. I've used half blueberries in this and it is amazing. The key is to have all the fruit frozen and don't use too much milk or you have a smoothie. For chocolate ice cream use chocolate soy milk. For me this hits the "creamy frozen" button and I'm less likely to stop at Baskin Robbins for a real fat bomb.
Depending on what kind of soy milk you use this can be really really low fat. You control the ingredients and can add spices or different frozen fruits, sweetener if you need to or some nuts. And it is far superior to most non-dairy ice creams.
