I actually made low fat angel food cake, mixed it with water and then put in cherry pie filling. It's pretty good!

Happy Birthday!

A simple cake that's tasty and fairly low-fat/low-calorie. It's a "replacement" for tres leches (3 milk cake).

Take a sponge cake and cut it in half. Rip 1/2 cake into bit sized pieces and press firmly into small square baking dish. Liberally apply 1/2 C of fortified milk to soak cake (try Mootopia & get extra nutrition for the same calories!), flavored with 1/4 t. vanilla and 1/2 t. any favorite flavoring (almond extract is nice, really yummy with vanilla bean or lavender).

Blend 1 1/4 C milk with sugar free, fat free white chocolate pudding. Gently blend in by hand 1 C fat free, sugar free whipped topping. Spread gently on top of soaked cake.

Rip up other half of cake into small pieces. Sprinkle evenly over pudding layer. Chill for at least an hour at very cold temp.

Dust top of cake with high quality dutch cocoa powder and a few chocolate shavings. Serve with a dollop of fruit sorbet or fat free, sugar free whipped topping.

It's REALLY good and not so bad for you. It's even better the 2nd day but won't last much longer than that.

For my best friends birthday I made him an ice cream cake.

I took some low calorie angel food cake and ct it into pieces. With this I lined a cake pan..I used a WILTON star pan. On top of the cake I used some low fat/low calorie ice cream...Fudge ripple from eddies.

After letting that firm up, I "frosted" the top with fat free cool whip and firmed that up in the freezer.

When it was nice and set I wrote...Happy Birthday Eric" on the cake with some traditional food gel.

Very "carvel'esque!

Anyone have any ideas for cake- being today is my birthday I wanted something good, with less calories. If anyone has any ideas I'd so enjoy it. THanks.
