| I made chicken salad for sandwich filling the other day; I used canned white meat chicken with light Miracle Whip, and added a few dried cranberries; I make it a day ahead of time, that way the cranberries plump up a bit.

Yum, there are some great salad ideas here!
Cherries have just started appearing in our markets here, so the last few days I've enjoyed a salad made with spinach, 3-4 chopped dried apricots, 1/4 cup or so fresh cherries (pitted and quartered), and about 2oz of turkey breast cut up, topped with a tbsp of honey mustard. YUM.

Our nightly (every single night) salads consist of:
romaine lettuce shredded carrots shredded cheese (just a little) green peppers grape tomatoes red peppers cucumbers red onions (yummy!) croutons (no more than 3-4 on mine) salad dressing (Marie's 1000 isl dressing is great!)

What i like to do is a mix of nappa cabbage, bok choy, and romain lettuce with shredded carrots and cabbage. But toppings wise i love to buy some oven roasted turkey breast from the deli department cut about 1/2 an inch thick. and then cut into 1/2 inch squares when i get home. Add some red pepper (1/2 inch dice) with some pine nuts. and use balsalmic vinegaret(spelling?).
i like also adding sliced mushrooms and red onion. :) And adding fresh herbs like basil or cilantro will make your salad a little happire ;)

I put whatever I have in the fridge. Usually, it's some kind of lettuce (for example, Pekin lettuce), tomatoes, cucumber, soy sauce and lemon juice. It's simple and very calories-less...

If you have a farmer's market nearby, try some local, fresh greens. Spinach, arugula, mesclun mixes, tat soi, mizuna, speciality greens mixes, lettuce mixes (there's a zillion different kinds of lettuce), fresh herbs (dill, chervil, chives, tarragon), green onions, and many differet radishes are all in season now here in Colorado. It's OK to ask the farmer for a leaf to sample if it's something you are not familiar with.
You can't beat fresh from the farm greens. In addition, depending on the market and what they allow to be sold you might find some interesting toppings or dressings like chevre (goat cheese) or speciality vinegars.

| PROBABLY not the healthiest option, but I made a barbeque salad the other day. I took field greens and baby spinach, then topped with some barbequed chicken (like barbequed beef for sandwiches, but it was pulled chicken), coleslaw, some hot sauce, and barbeque sauce. Yum!

| Great ideas! I love to have grilled chicken breast on my salads and use BBQ sauce instead of dressing...It adds such a kick and you don't need a lot of it. So yummy!

If you are using the oven for a meal do this: what I usually will do is on a tin plate (or any type of oven cookware)is put some almonds, pine nuts and walnuts (a mixture of all 3 or just one or two of anykind) and brown them until just golden. I then fill a jar with this mixture and when making a salad will add a Tbs or so to it! It saves so much time as you already have them roasted and they add a nice flavour to salads my son loves them! oh you can also brown them on the BBQ I tried it last week and it worked you just have to make sure you keep stirring them!
I am on an augula kick right now last week it was spinach! I like to use different types of bases for the salad so much more healthy then head lettuce

| I'm something of a purist but I LOVEEEEEE cucumbers, sliced peppers (all colors!), vinegar (yes, plain) and TUNA on my salads!!!

| Another favorite is a spin on a Taco Salad. Mixed Greens, Morning Star Spicy Black Bean burger, crushed Baked or Lite Doritos, Salsa, lo-fat cheddar cheese, and a dollop of lo-fat sour cream - for a spicy kick, throw on some green or red tabasco. I enjoy this with a warmed Lo-Carb wheat wrap.

Ok, another sparkgirl and I tried this salad this weekend and it is TO DIE FOR...Chinese Chicken Salad. Got it off of allrecipes.com. here is the link: http://allrecipes.com/Recipe/Chinese-Chicken-Salad-III/Detail.aspx We added mandarin oranges and some other veggies -- and used a romain mix salad to add more fiber. DELICIOUS, filling, and can be made in larger batches to strech over several meals.

I rarely use iceberg. Usually pick up the spring mix from Sams Club and mix with it spinach.
I like to "mix it up" sometimes and add some craisins or sliced fresh strawberries. Sometimes if we have a nut trail mix from the health food store I will sprinkle some of that on there. Manderine oranges are yummy to, with an oriental dressing, slivered almonds, and some cabbage.
I cut up my veggies and store them all in separate containers so I can vary it, as well as keeping the whole batch of salad from going bad since each item has a different shelf life.
Chopped chicken, canned chicken, canned tuna or leftover beef sometimes go on my salad.
I also have a wide variety of dressings. Have a friend that eats cottage cheese on their salad. Lots of variety out there!

I am always throwing together whatever veggies I have in the fridge. broccoli is usually a must - it really makes for a substantial salad and I think I'm addicted to it ;). Tomato, mushrooms, onion, and 1/4 - 1/3 cup of beans (usually garbanzo - my favorite - or red beans) are also my standard additions.
If I have some leftover brown rice and black or red beans on hand, I will heat those, and top my romaine lettuce with them. Then I will pile on the tomato, onion, salsa, jalapenos and a dollop of plain yogurt. It's a fantastic Mexican salad and a nice change of pace when cold greens aren't fitting your mood.
Plain yogurt is a great substitute for dressing and for sour cream. You really can't tell the difference when you combine it with the strong flavors of salsa and it's more flexible in my food pantry than sour cream since I love it with my fruit.

| I love to take a cup of imitation crab meat add 1 tbs of mayo and 1 tsp of mustard plus a little creole seasoning mix - Mix that up well then add a few cups of salad mix and some chopped tomato and toss. Tastes really great and has protein!

| I love blackberries and sliced raw zucchini on my salads, usually either romaine or mixed young greens based. Also, instead of dressing I usually put cottage cheese on instead.

I love mixing 1 tsp of tahini with 1 tbsp of balsamic vinegar, plus a little garlic powder and fresh cracked peppers and using that as a dressing. Its really good over a salad of shredded cabbage and carrot, chopped scallions and raw sunflower seeds.
I also love using hummus as a dressing...just thin it down with some water or lemon juice and toss it in with whatever greens 'n' veggies you are using.

my "new" salad consists of romaine, 1oz of cheese, sliced baby carrots & celery, tomatoes, raisins and a few whole wheat crackers and 2oz of whatever meat was served the night before... steak/chicken/tuna/turkey topped with honey mustard dressing.

| One of my favorite salads is a spinach salad. And for those of you who don't like spinach I am sure you will change your mind after you try this. One bag of baby spinach is the base. Then you cut up strawberries and mandarine oranges to go on top. Then you add either candied or regular almonds in. The dressing that goes best is poppyseed. You can get a low fat version. This is so great because you get fruit, vegetable, and protein. I love it. You can also vary it with other fruits like apples and raisins with walnuts.

| I stick with the regular salad. I have recently started to make cajun chicken and put it over the salad. Also found the light done right three cheese ranch dressing.. hmm yumo- taste just like cheese on the salad with less calories. Its wonderful!

| I created a meditteranian theme salad tonight... maybe a bit greek.... base is baby spinach, then I added chopped roasted red peppers (not in oil), black olives, crumbled feta, tuna fish, and some balsamic vinegar dressing (garlic croutons optional!)

| I love grilled chicken salads with grilled vegetables included. Use any lettuce or salad greens you like, fresh grape tomatoes. While you're grilling chicken, grill zucchini squash, onions, mushrooms, bell peppers. Top greens with chicken and vegetables, croutons if you like - and a balsamic vinagrette! Fantastic!

| I've recently discovered bean sprouts! Always saw them on the salad bars but usually steered clear. Now I LOVE them! I'll be having a nice chicken salad for dinner sometime this week and I'll definitely try the mushrooms...mmmm

Hi:
I love putting a tin of mandarin oranges with vidalia onions in my mixed baby greens...top it off with Red Wine Vinegrette...yummmmy!!!!
Another ingredient that I have just begun to use is dried cranberries (Craisins) and/or dried blueberries. (just a 1/4cup)... very tasty

Hi all, I've rediscovered salads recently. Before, I thought they were cumbersome to make and still more cumbersome to eat, and not really worth the effort unless I could sprinkle tons of nuts and cheese on them. However, recently I've discovered a new ingredient that makes me LOVE healthy salads. I grill some mushrooms (put salt on the pan, heat it up on medium heat, chop up mushrooms, and let the water in the mushrooms cook out, no oil or extra water needed) and use these on a salad with a base of romaine lettuce. Add some cherry tomatoes, chop up a hard-boiled egg and distribute evenly around salad. Voila! Yummy, healthy salad. Especially for those who really like to have some warm food in their meals. I've been using Thousand Island dressing on this, even though that isn't my favorite dressing. It just seems like a salad that needs a creamy dressing rather than an oil-based dressing. Pretty good stuff.
Just wondering if anyone else has discovered something healthy that isn't usually put on salads that makes all the difference. Post your salad ideas here!
