| i think the main thing working with yeast, is not have the water too warm, or it will kill it!

Buying yeast in a jar vs the little packets was an issue for me. I had packet yeast fail, but jar yeast is more consistant.
People who make sourdough bread keep a "starter" culture growing in the fridge, that they feed every few weeks... if you're into that, you might want to do a google search on it. It's kinda cute, some people even name their yeast! =)

I agree. This way you prevent using your other ingredients and then finding out the yeast is a dud. If it doesn't foam and stink, throw it out and get new yeast.
Also if your yeast is dead and you don't have time to run out for new stuff you can always use baking powder and make a short crust type pastry for things like pizza. We've done it in a pinch. I like the Fleishmann's fast rise as I can make the pizza crust and in the time it takes to cut the ingredients and dress the pizza it is risen enough to go in the oven.
Oh and you get all that exercise for your arms kneading the dough.

actually the only tricky part of working with yeast is to proff it.
put it in a cup of warm water (110°F) with a teaspoon of sugar.
this gets the yeast eating the sugar and making CO2.
Buy a jar of Flieschmanns yeast and keep it in the fridge.
I make my own bread, donuts and some yeast cakes.
Your yeast will evetually die, even when kept in the fridge, in the dark, but if you use it up before the date on the package you won't have any problems.

| Lately many recipes I would like to try call for yeast. I am a big believer in duplicate what you want when you eat out at home for far less calories. I am finding recipes for baked donuts, pretzels (the soft bake kind) and cinomon buns which all call for yeast. I hear working with yeast can be tricky. Anyone have any tips for someone who has never done this before?
