pureed prunes, or I use canned pumpkin. I think there are a lot of alternatives out there! I think Bananas was another one!

What's the proportion for substituting oil for something else in baking? I know you can use apple sauce instead, but how much? Equal? Less?

Thanks for any advice/suggestions.

In cookies, replace half of crisco with mashed banana. If the recipe calls for 1 cup crisco (sick), I use half cup crisco, half cup banana.

1% or 2% cottage cheese will replace ricotta in a lot of recipes. If the texture is an issue just run it through the blender a bit.

I also do the wheatflour vs white flour , applesauce instead of oil when I can, and plain greek yogurt (especially Fage which has 0% fat)instead of mayo or sour cream as much as possible.

Yes agree, plain yogurt. I love to do this, and I use yogurt as a replacement when making tuna fish sandwiches as well. Or mix some herbs into some greek yogurt and use that as a dipping sauce for artichoke leaves! I love yogurt =)

Yogurt for mayo? I never even thought of it! We usually just use light Miracle Whip, we never have mayo in the house. I assume you are talking plain yogurt, yes?

Becky: Oh Thanks, for the replacements or use this, instead of this, when cooking or baking. I wrote that in my NOTES, in my cookbook that i refer to.
That will be a big help. I enjoy & very much appreciate all the little tid bits & helpful hints i can get. Thanks Again

yea, there is a little difference in the texture with the applesauce...but it's not noticeable

I am very surprised apple sauce would work as a replacement for butter in cookies. I can see it for other things, but I thought the texture would be too different. For a while, I was considering making cookies using fat free cream cheese instead of butter, but I just am so unsure that it would actually work. If applesauce works, the fat free cream cheese will too. I am looking forward to trying it!

you can replace butter/margarine with apple sauce. You use a little bit less because it's runnier. When you use apple sauce you can also add less sugar because it's naturally sweet. I used it for all my christmas and easter cookies, nobody noticed a difference! (except that they didn't feel as bloated after eating 5 cookies)

another thing is splenda instead of sugar

whole wheat instead of white flower...if you don' tlike the taste you can also do half and half.

anything that uses mayo....put yogurt in instead 1 cup fat free yogurt= 100 calories 1 tbsp mayo = 100 calories

also using eggwhites instead of whole eggs, it's less fat, calories, and most importantly CHOLESTEROL!
