I love salad with black beans and corn, too. I add sliced red onion and lime cilantro dressing. Yum!

Mom of 4, try the crockpot. Depending on how long you want to cook them for, you may not have to soak overnight.

For my blackbean soup, I soak overnight then put them in for 8 hrs on low. They have enough breakup for me that sometimes I dont need to mash. In your case, you want them whole, so you dont need to cook them as long, but if you did cook them 8 hrs, you probably wont need to soak them.

I second that on the Asian Salad from McDonald's. It's the best and tops any of Wendy's salads for sure. And it's all because of the edamame!

Thats good to know...I prefer the asia salad with grilled chicken..only 300 calories, and I use the balsamic vin.

ust my prferences...I love the edamame!

Hey all I run an Mcdonald's and we are getting a southwest salad it's onlyh 330 calories and tasted today and i was impressed I'm not a big salad eater but looks like a good option for dieters on the go.

Thank you ChefChip, I appreciate your advice. The recipe looks delicious and I wanted to use dry beans, for the very reason you cite, to reduce the sodium.

This is really good to know, I love to use beans and this prep method is so simple, I can use dry beans to keep the sodium down, and get it done in time for dinner!

To lessen the sodium don't use canned anything! Washing canned vegetables actually lessens nutrtional value, but retains the sodium. I prefer frozen!

Heres a tip for beans: NO NEED TO SOAK OVERNIGHT!

Put in a stock or sauce pot fill with cold water.
Place this on stove top, bring to a boil. Boil five minutes. Remove from heat, strain beans.

Replace beans in pot, add more cold water and repeat.

Depending on beans you may have to do this procedure a total of three times, but twice usually produces a nice tender bean (slightly al dente).

Let the beans cool, and use.

Total cooking time less than 1 hour, and tyou retain most of the nutrients!

HI I love corn, and black beans; they just seem to go together. I use canned black beans, they are already cooked. To lessen the sodium, rinse well with water and drain.

There s a highly rated, editor's choice recipe called "all purpose southwestern corn and black bean salad".

It sounds delicious and I want to try it.

However, it calls for a pressure cooker to cook the beans.

Does anyone know of an appopriate alternative method for cooking beans besides a pressure cooker? Thank you very much.
