Last night for dinner I prepared the Easy Baked Fish
Fillets recipe and Vegetable Fried Rice , I used tilipia fillets. We enjoyed it.

In planning for guests this weekend I remembered a good and easy stand by. Microwave some baby carrots until desired doneness and drain any liquid. Stir in a little all fruit spread of either orange marmalade or apricot.

My boss gave me red quinoa with hempseed oil and flaxmeal over it and a bit of soy milk as a hot breakfast cereal. Was it ever good! My kids would balk at it though, they don't like the little tails that cook out of them though and complain they are worms.

Quinoa(pronounced: keen-wa) is a really healthy side. I sometimes use it where I would normally use rice. Make a pilaf out of it with some fresh vegetables.

It does have a bit of a different flavor, though. I would try it before serving it to your family. I find it is one of those grains you either love or hate.

Oh that tilapia recipe sounds SO good. For salmon I brush the fillets with maple syrup and then put some pepper on them and broil or BBQ. The syrup crystalizes and crisps the edges nicely. It is our favorite way to do it. We have also done spicy cajun style seasonings and that is good too on salmon or arctic char.

One favorite way to do fish is to do fish cakes. Cook your white fish (or salmon or tuna) and flake it. Add mashed potatoes for about 1/3 to 1/2 the mix. Put in some parsley, lemon pepper, minced onion, maybe some minced green pepper and grated carrot. Chill the mix to firm it up, if it is too dry you can add an egg white.

Scoop out balls of it and roll in flour. Heat a bit of oil in a cast iron pan or even a bit of cooking spray will do and fry each side of the patty. Serve with ketchup or salsa.

You can also do them in the oven if you grease your pan with cooking spray then spray the tops of the patties (and they all cook at once instead of in batches). My kids love fish cakes, my vegetarian will eat fish occasionally and will eat them and they even will reheat them for breakfast. I love that you know how much fish is in them compared to filler and if you like more fish just use less potato. I tried a salmon recipe that used tofu as the filler but I didn't like it...though I think it may be that I used the canned salmon called for in the recipe, not the tofu's fault!

I also got the Reader's Digest Heart Healthy cookbook and they have a nice recipe where you stirfry veggies and then put them under the fish as a nest. You put the fillets on top and then season them and top with a bit of grated cheese. With a nice crusty bread you'd have a full meal deal!

Oh, asparagus, the fresh stuff is lovely! You can cut it up to stir fry or steam it. A little bit of a broccoli taste but more delicate. Just don't overcook it you want it to have some snap still.

I've always liked fished as well as my boyfriend. But we are just now getting into eating it a lot. I was finding it hard to find ways I liked it since I don't like lemon flavored stuff. But your recipe sounds great! We'll have to try it this weekend.

WOW, that sounds really good. My husband just started eating fish since he is trying to bring his blood pressure down along with his cholesterol. I am not a fish eater, but I'll tell you. When he made this Tilapia, it reminded me of my dad's trout he used to make when I was little. Very mild and tolerable if you don't like seafood. Anyway, I found a couple recipes for Tilapia and they're good, but this one sounds really, really good. I can't wait to try it! Thanks!

I know you didn't ask for fish recipes - but I have a great one! Take some tilapia fillets and dip in a beaten egg white. Then dip in bread crumbs and sprinkle w/ garlic powder. Bake in a sprayed casserole dish for about 30 minutes until it flakes. Yummy! Sometimes I will even sprinkle a little parmesan cheese on top.

Okay. Being new in this hole thing is hard. My boyfriend and I do really enjoy fish (our kids don't though) but i do find it hard to come up with ways. I also find it hard for any kind of side dishes. Being borderline diabetic I have to go low are carbs. This seems to be working for me. But I find it hard to find things LOW CARB... ANY ideas?
And is asparagus really any good? What is the taste like. I do find myself fixing broccoli a lot!

A fish dish I do know is, Pink Salmon with a little honey and fat free butter mixed together, poured on top and baked. It was wonderful!!!

We have been eating a lot of fish lately too. I think there is nothing nicer than roasted asparagus spears or just steamed broccoli next to the fish. I like putting a bit of crushed chili peppers on my broccoli. The last cooking light magazine had a nice broccoli and roasted garlic recipe.

We do rice with fish sometimes and I cook the rice then in a bit of oil I lightly cook some shredded carrots and chopped onions and green peppers. Toss the rice in and add a pinch of curry powder and salt and pepper to taste and it is quite nice.

FINEDEZINER - My husband and I both like spinach and thought this was pretty good, especially for how low it was in calories. I did use the part skim ricotta. I haven't posted anything on the recipe site as I'm new to SP and still learning to navigate my way around!

Sally-Lou, I just did a quick calculation of nutrition info on your ricotta-spinach pie, and I think I'll try it! It comes to about 95 calories per 1/8 pie, if you use low-fat (part skim) ricotta. Bet you could reduce even further by using one egg and one egg white. Have you shared this on the recipe site? It's easy!

ANOTHER GOOD ONE FOR FISH - I make whole-grain couscous (follow package instructions - sometimes I use veg. broth instead of water to cook it in), but THEN in a separate skillet, saute (in olive oil) some diced onion, some garlic, and some raisins, and chop up a MANGO and add it to the skillet along with the couscous, and give the whole thing a toss. This goes great with a broiled fish that has a little "island" spice or condiment on it, like jamaican jerk sauce, or mango chutney.

Those of you that like spinach might enjoy this one.

CRUSTLESS RICOTTA PIE

1 pkg. (10 oz.) frozen chopped spinach
½ cup chopped onion
2 eggs
1 ½ cups ricotta cheese
¼ teaspoon salt
¼ teaspoon pepper
¼ teaspoon dried dill weed
¼ teaspoon garlic powder
2 teaspoons all-purpose flour
Paprika

Combine spinach and onion in 1 ½-qt. casserole; cover. Microwave at High 5 minutes, stirring after half the time. Place in Tupperware colander to drain, pressing down with rubber spatula to help drain well.

In medium mixing bowl beat eggs with fork. Stir in ricotta, salt, pepper, dill, garlic powder and flour. Blend in spinach and onion. Spread spinach mixture in a greased 9-in. pie plate with rubber spatula. Sprinkle with paprika.

Bake in preheated 375 degree oven for 20-30 minutes, or until center is set. Let stand 5 minutes.

Here is one of my staples. It is fast and easy and goes with lots of things.

Microwave broccoli & Rice

½ Cup water
½ Cup uncooked instant rice
2 tsp. butter, cut up
¾ tsp. chicken bouillon
1/8 tsp. pepper
2 cups (1 bag prepared) fresh broccoli florets

In a 3-cup microwave-safe bowl, combine the water, rice, butter, bouillon and pepper. Top with broccoli florets. Cover and microwave on high for 2-1/2 to 3 minutes. Stir before serving.

Yield: 2 huge servings. 143 calories each.

I cook salmon and talapia often. I grill the salmon usually. One way I enjoy either on the charcoal, gas, or George Foreman grill is to use a rub I also use on chicken - 2 TBSP Paprika, 2 TBSP Brown Sugar, and 2 TBSP Salt. Sometimes I use less salt. Easy and delicious.

Tilapia is a little bit more difficult to grill so I like to use parchment paper. On a piece of parchment paper put 1/2 cup rice (brown or white). Put one peeled garlic clove in the rice. Season fish filet to taste with salt and pepper, place on top of rice. I top the fish with red, orange, and green bell pepper, asparagus, onion, mushrooms - really whatever vegetable I want. You could spritz it with some white wine or lite salad dressing of your choice, then fold the paper to close and bake at about 375 - 400 degrees for about 20 minutes or so. It's done when fish flakes. Absolutely delicious!

Sweet potatoes!! Either mashed (mix with a whipped egg white to make them fluffier), or cut up and tossed in a teaspoon of olive oil, sprinkle with a seasoning of choice, and roast them. Its a different taste and a nice change from pasta or regular potatoes.

thanks for the advice aurora. The fish and chips sound real good! Gives me some good ideas and some alternatives I can use with the fish. The coleslaw looks pretty healthy too! GREAT IDEAS!

Lightweight - thanks also for the info, I find it tough to combine spark sides because I haven't really tried it and I don't know what goes good with fish. But I did take a look and i will try some of the dishes for sure.

ANY OTHER SUGGESTIONS?? This is awesome!

You could do a coleslaw. Just choice a low fat mayo, maybe mix in very small amounts of vinegar and mustard. Maybe add pineapple chunks and raisins to it.

If the fish is being cooked in a way that lends itself to being an oriental type dish, maybe do a rice dish with mixed veggies, soy sauce and some other seasons. Make a not really fried rice type dish.

One pretty popular dish for fish is the fish'n chips combo. Chips usually means french fries. There is no reason your 'chips' need to be the deep fat fried in grease variety. You could do some oven baked fries instead. If you do it this way, I suggest dipping the fish in a milk and egg white mixture and then roll them in bread crumbs, lightly mist with cooking spray and bake flipping half way threw the cooking process so they resemble the way this type of dish is usually served. Maybe ketchup and/or fat free ranch dressing for dipping. I love stuff done this way (I would be using chicken not fish) because it looks and tastes pretty naughty, but is actually pretty nice!!

I'm trying to concentrate on eating fish and white meat and eat as little red meat as possible. However, i find that deciding what sides I can have with Fish is a bit difficult. I want a tasty & healthy but low calorie alternative to just rice and pasta... or I can put it in but just as long as it's not plain. (I sound picky don't I !)

Any suggestions?? THANKS! =)
