| It amazes me to see how different people made egg salad!! Such a simple food! Tasty, too! I'd never thought of the peas, or carrots.

| Does it have to be cider vinegar? Are there any substitutes that won't alter the taste too much?

I like to add shredded carrots to my egg, chicken, and tuna salad! It is soo yummy. It gives a little extra crunch.
When I was little my mom used to cube granny smith apples in my tuna - I loved it. I need to do that! I had forgot all about it!!

Sometimes I like to add peas to my egg salad. I just get a little bit out of a bag of frozen peas and run them under hot water to "defrost" them before I add them.
Chopped celery is good too added to egg salad when you want some extra "crunch".
I will have to try that recipe with the Splenda; I never thought of using that in egg salad. I sometimes use a little lemon juice in mine though, and I add some dill weed to it.

I made this today for the first time and I think it turned out GREAT.
4 egg yolks 8 egg whites 1/2 cup chopped celery 1/2 cup chopped onion 3 tbsp Fat free mayonnaise 1 tsp apple cider vinegar 2 tsp Splenda Black Pepper to taste
Boil 8 eggs for 10-20 minutes. Peel off egg shells, and with four eggs,take out egg yolks and discard. (Too much fat and cholesterol!) Smash up eggs in mixing bowl (or use a food processor if you want smaller pieces). Add Mayo, celery, onion, Vinegar, Splenda and Pepper, and you're done!
This makes about 18 oz of egg salad...a serving size is approximately 3.5 oz...
Per serving:
Calories - 78 Fat - 4 g Sat Fat - 1.3 g Cholesterol - 170 mg Sodium - 72 mg Protein - 9 Carbohydrates - 1
