I'm not sure which recipe you're using. The recipe I have calls for you to grate very firm tofu, mix it with the seasoning, form it into omelette-shaped patties, and fry. Then you put in the filling and fold over. This recipe can't really be kept. The tofu kind of goes "weepy" and tastes strange if you keep it in the fridge. I had extra the last time I made it and kept it for the next day. It was ok but I had to pour off a cloudy liquid that formed before I could use it. I don't think you can make enough for 5 days without it getting a little funky. Maybe your recipe is different than mine and you can. Good luck.

Making a lot of stuff out of tofu - one thing being "omelettes" - anyone have any idea how long I can keep the mixture in the fridge for? I want to make enough mix for 5 days of omelettes but don't know if that will last in the fridge that long.
