You can also try the plum butter, but I do use fat free cottage cheese to replace the oil.

She used equal amount of cottage cheese to sub for the oil. So, if the recipe called for 1/2 cup oil, try 1/2 cup cottage cheese.
I made muffins on the weekend subbing plain non-fat yogurt for the oil, one to one ratio. It worked really well. The muffins were slightly dry, so I just microwave them 20 sec before eating them, and then it doesn't matter.
I really don't enjoy the texture the apple sauce sub gives muffins. It doesn't sit right with me.

Awesome idea! I'm addicted to pumpkin spice muffins, too ( fitbottomedgirls.blogspot.com/2008/05/nosh-punk-in-muffins.html), but I'll have to try cottage cheese!
Have you ever tried black bean brownies? Just a can of pureed black beans (unseasoned) and a box of brownie mix (don't add the eggs, oil or water), and voila! Better for you brownies!

Thanks for the idea. I usually just use applesauce or carrot/pumpkin puree. Might be weird-ed out by the cottage cheese, but I will definitely try it and keep an opened mind!

My co-worker made some muffins over the weekend, using bran, oatmeal, shredded carrot, zucchini, (among other things) and replaced the oil with fat free cottage cheese. She didn't blend it or anything, just mixed it right in. Those muffins were SO moist, even 5 days later. I'm sure the zucchini helped with that. I was very, very impressed. They also didn't have the chewier texture you get with replacing the oil with applesauce. You NEVER would have known these muffins didn't have oil. Not to mention the extra protien.
I'm definitely trying it next time I make muffins! I won't add any extra salt, though.
