I think I'll try the sweet potatoes. I would try the cabbage, too, but my husband hates it! We've got an unwritten rule that I shouldn't force him to eat too much of it!

I think sweet potatoes go great with pork. I usually make "fries" - cut them and put them in a ziploc. Spray a little cooking spray on them, then put cinnamon. Shake it until they're covered, then bake at whatever temp you're baking the pork. (Remember - it can take a while for them to get soft enough, so plan on at least 20 minutes.)
You can do all the prep in advance and just leave the ziploc in the fridge. Then, when you want to make them, just shake it all on to the cookie sheet.

| I often serve sautéed shredded cabbage as a side with pork and apples. I usually put the apples in the cabbage and sauté them too but it is good cooked separately.
