my husband and i love taco salad...i cook up lean ground turkey, add the taco seasoning, a can of black beans and cook it all up. we put a scoop of the meat mixture onto a huge bed of baby spinach and then add tomatoes, onion, peppers, sometimes a handful of corn, mushrooms...whatever veggeies...top with reduced fat or even fat free cheese and voila. it doesnt need dressing b/c the meat is saucy and seasoned...but you could top with salsa or another yummy dressing is to mix equal parts of law fat ranch dressing with salsa. it's good. sometimes i add on a serving size amount of baked tortilla chips and sometimes we skip that.
*next time i make it i am going to try it with ground chicken.

also i have found many a recipe for low fat chicken enchiladas, and they come out great.

I adore Mexican and if you eat it out it can have alot of fat. But, if you make it at home you can take alot of the fat out. Make sure your meats are lean and when I shred my chicken or beef or pork I do it by hand and take the time to separate the fat out. When I make Enchiladas I don't fry my tortillas anymore, I heat some enchiladas sauce in a pan and warm them up in the sauce and them they are ply able enough to roll without the fat from frying. I know it takes more time, but you are worth it!!

I make a salad using all taco fixings: shredded lettuce and spinach, shredded lowfat cheese, soy chorizo, halved cherry tomatoes, with a dressing of avocado, lime juice, and water. Sprinkle with cilantro and chopped green onions, and serve with nonfat refried beans, salsa and baked tortilla chips. Check this out -- it is a large dinner salad that makes a very healthy meal.

In Mexican restaurants, I use a similar approach -- one vegetarian soft taco, skip the sour cream, with extra grilled mushrooms, tofu, or vegetables on the side.

Mexican is my favorite!! I have found many mexican recipes on sparkrecipes.com that are healthy. I created an onsite cookbook to contain some of them.

The boca crumbles taste just like taco meat especially if you cook them with a little bit of the taco seasoning.

I make veggie fajitas a lot. You just slice up the big portabello mushrooms and saute them in cooking spray with some sliced onions and green bell peppers. I usually use half an onion and pepper per mushroom. Season it to taste with cayenne pepper, cumin, and salt. Tortillas, lettuce, tomato, salsa, and a little low fat sour cream and you're good to go. You can even pile it up in a bowl and skip the tortilla. I also make veggie taco salads. Black beans, a little corn, lettuce, tomato, sour cream or guacamole, and salsa. When you're making something like that every ingredient needs to be really good for it to turn out well. Taste the beans and corn and season them for sure.

Hope this helps. Tex-mex is one of my biggest challenges. hehe.

You could use regular black beans instead of refried. Also, sneak in extra veggies - corn, etc.

I have used Boca burger crumbles instead of (or added to) beef. If using beef, I always use at least 90% lean.

I also take a can of mushrooms and stick it in the blender to chop them up, then put that in with the beef before I add the seasoning. My kids have never noticed it's there. Same with onions.

For garnish, fat fat sour cream is a staple in my fridge. Lettuce, too.

And I use whole wheat tortillas instead of white flour.

The slow cooker chicken taco stew recipe found on sparks recipes is really good and not horrible on calories. It's a recipe that can be modified very easily too. I always add brown rice to it.

I used the ground turkey for burgers one night when I had extra teenage boys for dinner and all of them said they liked them as much as regular ground beef. I was surprised but now I use it in place of ground beef for everything.

I've never tried using ground turkey, but maybe I'll give it a whirl. Generally, I don't eat a lot of meat, though. Thanks for the suggestions.

I Love mexican food too! I like to make it using lots of lettuce and cheese and beans, and taking it easy on the ground beef (or turkey burger) and cheese. You could even use low fat or fat free cheese.
That sounds good, maybe that's what we'll have for dinner!

What about home-made Mexican is bad for you? I make it a lot and it's really healthy.

I use a lot of beans, I don't use lard (when cooking beans or something that normally calls for lard I use white onion and epazote, a green that you can find in Mexican markets - a tip I learned from Rick Bayless), and I use organic stone ground corn tortillas for nearly everything that needs a tortilla - they're better for me than the flour or spelt tortillas.

If we're using meats, we use lean cuts, and if oil is necessary we use olive or safflower oil. Most of the recipes I make don't call for cheese, so that's not necessary.

Most of the Mexican I make is from one of Rick Bayless' recipe books - perhaps that could help. True Mexican is really healthy. What we think of in the US with our versions of tacos, burritos, etc. isn't quite so much - but can be modified using healthy and lower fat ingredients.

I love Mexican food, but it's SO bad for you. Do any of you have secrets for making it more healthy? I already use the fat free refried beans and lower fat cheese.
