Rhubarb cake sounds yummy. And applesauce would add another fruit.
I also love rhubarb in sugar free strawberry jello.

I USE APPLESAUSE IN PLACE OF SHORTENING ALL THE TIME!! I USE UNSWEETENED AND ALSO CUT DOWN THE AMOUNT OF SUGAR BY 1/4 CUP,NO ONE IS THE WISER AND THE IT'S MUCH BETTER FOR YOUR 'HEART'!

| I have a recipe for rhubarb cake which I have made since I was a kid. I want to make it again, but it asks for a cup of shortening. All I can think of is trans fats. What would be a good substitute for the shortening?
