I have an electric skillet and I love it coz you can actually get some browning and then I can turn it way down and the food stays warm for hours

i make crock pot dinners. chicken and lots of vegetables. i put low fat celery and mushroom soup.

Working 6 days a week can be a pain and I love to cook! What I like to do is on my day off I spend a little time preparing my main ingredients, I may grill up 4 or 5 chicken breasts on the grill or marinade and grill a london broil or make a batch of browned seasoned beef, and have it portioned out in the fridge or freezer. When I come home I made add it to a salad or warm it up on top of my rice in a steamer or make a sandwich on the counter top grill, add my veggies and fruit for a light desert, maybe even a jello or a fat free pudding with some nilla vanilla waffers and fruit on top

i tend to make scrambles a lot...with one whole egg and a couple of egg whites...i cook whatever veggies i have in spray oil and then add the eggs. at the end i top it with a serving of reduced fat shredded chz. salsa always tastes good on top :)

I buy a lot of fish and boneless, skinless chicken breasts frozen in individual portions. I take them out in the morning to thaw, and place in a baggie with some low fat/cal salad dressing to marinate. It does not take long to cook them in a pan on the stove. Add some frozen veggies steamed in the microwave and a Minute Rice Ready to Serve individual serving cup of brown rice, and I have a meal in about 15 minutes.

My favourite (as of at the moment) easy dinner is to cook whole wheat pasta and frozen veggies, drain it and then pour an egg over it until the egg is set. A salad on the side!

I like to microwave 1 cup of beans and top with at least a cup of lettuce, tomatoes, and onions, then top that with salsa. Like a taco salad except without the high calorie shell. I think this is about 300 calories, and it's quite filling and fast.

Instead of preparing the pasta dish with butter, try cooking the whole wheat pasta, adding a tablespoon of olive oil, and steamed broccoli and strips of broiled chicken. It is very good with a lot less fat and calories. You can also add mushrooms, onions, carrots, etc. if you like. Sauté them in a little cooking spray first. Very delicious!

I agree CHUBBY !!!!!!!!!

Forget pies and pizzas - who really needs them ???

Cook a meal - portion it straight away - eat one - put the rest in the freezer. If you're still hungry then eat fruit / fat free yogurt for pudding.

Afer a few days you only then need to cook once or twice per week as the freezer is stocked with numerous healthy food portions !!!

I think everyone does even those who do not have to watch what they eat LOL The best tip I have Is make extra of a dish or casserole soup whatever it may be and freeze it in portion sizes then a zap in the microwave and its done ( Must do this myself lol) This way you know what you're really eating too.

When my hubby is out of town (which is a lot), I still want something healthy but I don't want to go to all the trouble of cooking. So, what I do is get out a couple of sheet pans and cover them with aluminum foil. I throw some chicken breasts or pork chops or fish or something on one and I take the other one and chop up whatever veggies look good that day and throw them on. Drizzle both with some Extra Virgin olive oil and season with salt and pepper and whatever else you like and toss in the oven. Always turns out great! Well, occassionaly, I burn the veggies but most of them are still yummy! My personal fav is cherry Tomatoes but you have to let them cool a bit or they become a bomb in your mouth!

I'll also chop up some zucchini and onion or shallot and garlic and whatever is on hand and saute it on the stove top and add some cheese on top. Yummm-o!

Pretty healthy, too.

My favorite quick meal is fiesta rice with chicken. You put about 1 cup of salsa with 1 cup brown rice, and add chicken (the number of chicken breasts needed for the number of people that are eating it) and about 1 cup of water. If you have a rice cooker you just set the thing and walk away, but otherwise you cook it until the rice and chicken are done and the meal is complete. It is easy and quick and inexpensive, especially for college students. The amount you make can be easily adjusted for the number of people eating it. And the spiciness can be adjusted byt the type of salsa you use.

I recently made a wonderful dish. Very easy. 1 & 1/2 sticks of butter or margarine, 1 cup skim milk, 1 cup parm. cheese. Cook until a little thick. I poured mine over chicken, broccoli and whole wheat fettuccine. It was very good, although the calories might not be low.
