| If i ever find myself that i have cooked more than we can eat i always put some away in the freezer. I always leave enough to eat on two days. If the next day there wasnt enough i make a side salad or something light like that.

I find cooking / eating for one really easy !!!
Forget pies and pizzas - who really needs them ???
Cook a meal - portion it straight away - eat one - put the rest in the freezer. If you're still hungry then eat fruit / fat free yogurt for pudding.
Afer a few days you only then need to cook once or twice per week as the freezer is stocked with numerous healthy food portions !!!

I love to cook, but I definitely enjoy it more when I am cooking for others. I also don't mind eating the same thing for several meals in a row - but it can be hard to not go back for seconds when you really enjoy something. And I make a lot of Indian food which works best in larger batches. I try to decide out my portion before I eat, so I know where I stand with my calories & stuff. Also, with leftovers I know I only have to cook once or twice a week and I have good food to look forward to.
I do find it hard to buy snacks though. I tend to want to eat the entire package in one or two sittings. Especially crunchy, salty things. I buy pitas, split them & cut them into wedges & bake for 5 minutes to get crispy - then eat with some sort of dip (hummus, low fat dip of choice) It is a little work, but better than eating the whole bag of chips. For pizza, is there somewhere nearby that sells it by the slice, for an occasional treat? Or, you can make your won (but I recommend buying frozen dough, not using pitas). It is a grat way to use up the laftover chicken breast or grilled veggies, etc...

Hi
Precook your meats for a week in a slow cooker and keep frozen veggies on hand. Then it's easy to assemble stews, stir fries, casseroles, soups, sandwich, salad, for one. Sauces and spices/herbs make meals interesting.

If you want pizza or such you can freeze left overs with a vacuum sealer and I find it easier not to get into things if they are sealed.
I usually freeze leftovers then vacuum seal them that way it doesn't crunch the food.
I like pizzas on a tortilla
But I have to agree with you it is more difficult to cook for one rather than 2 or more

| I find eating for one a challenge most nights because by the time I get home from work, I don't feel like cooking for myself. My bf comes over on the weekends and we'll cook up chicken or pork on the grill and have enough left overs for at least two or three nights. When we do this it really helps me eat better. Otherwise I find my big meal of the day usually is at lunch time. I'm lucky enough I can come home for lunch and put together a sandwhich or salad. Today I ate out for lunch at my favorite diner. A big burger and handful of fries......I've been full the rest of the day. So no dinner tonight, just an apple and a sugar free fudgsicle. Yummy.

I live on my own, and therefore shop only for myself! It is definitely hard to not be tempted when i'm grocery shopping. I usually get something I shouldn't. That's life though.
Do you like to cook? If you are a fan of pizzas...make your own! Using a pita is good, and you can control the toppings you put on. no left overs either!
I love to cook ( I BBQ a lot), so I will cook one portion of meat, veggies and a carb, or if i'll make something in batches (spag sauce, lasagna etc).

eating for one is so difficult. Pies and pizzas are not designed for single living. yes you can have one slice but how long until you want another. the best way is not to buy them at all; show restraint when food shopping for one. if you buy to much you will eat more. snacking is also easier for single people as you have no spouse to stare at your greediness. if you agree or can help please reply. thanks, john
