Maybe you can pack some energy bars, granola bars, nuts, dried fruit and some 100 calories packs for treats. Bring bottled water as you can probably get ice at your hotel. Pretzels are good low cal snack.
As for meals, that is hard. Maybe pack your own low fat salad dressing and get a salad at McDonalds. Fresh fruit/veggies will be hard when you don't have a fridge. Subway is a good choice too. Do your best with hotel food, stick with salads and grilled chicken or fish and veggies.
Maybe bring an excersize DVD with you if your room has a DVD player. Or some hotels have their own gym you can use.
Good luck

Okay, here's my dilemna. My job has me away from home for 3-4 days at a time, staying in hotels, some with refrigerators, some without. My access to food is limited: airports/airplane, hotels, fast food/restaurants and a few stores here and there. I carry an insulated cooler with me, but really, what are my options to try and eat healthy without going nuts? I usually give up by day 2 and just over indulge in hotel and restaurant food which is over-sized, over-priced and super-fatty. Any suggestions would be appreciated.
