I usually eat chicken so these are some fast ideas with chicken.

Buy pre-butterflied breasts or do it yourself, seed a jalapeno pepper and stuff with 1/2oz of pepper jack cheese. Wrap the sides up and secure with toothpicks. Roll in cornmeal and throw in a 350F oven for 15min. Serve with refried beans and a salad.

Dredge chicken breast in seasoned bread crumbs mixed with 1tbsp of grated parmesan cheese. Bake for 12-18 min, depending on thickness of your chicken at 350F. I serve this with whole wheat pasta tossed with basil, parmesan and olive oil.

Buy pre-made pizza dough or make your own. Cut into 4-6 pieces and stretch out. Fill with 1/4c shredded low fat cheese, 1/4c pasta sauce, and veggies (I like mushrooms and spinach, my husband prefers mushrooms and hot peppers). Spritz with spray butter (optional). Bake at 425F for 14 minutes or until crust is toasty brown. Serve with more warmed pasta sauce on the side.

Um, OK so that's just three for now. But I cook chicken pretty much every night and never take more than 30min or so.

I have the same problem. My 14 year old never starts eating. I know he is a growing boy and all that but he is getting very soft in the belly and i don't want him to end up with the same obesity problem I do. If you have any ideas please share. Quick meals and snacks would be helpful. Thanks to all.

One of my favorites is a wrap. I usually prepare the night before when I am making the kids lunches. Instead of a flour tortilla, I use a flatout wrap. I typically spread 1T of low-fat cream cheese and stack turkey, FF cheese and lots of veggies. Roll it up and wrap in plastic wrap. They make a fast lunch, even if you don't prepare it the night before.

What are some quick meals to prepare that are not so very unhealthy to eat - I have a 14 hr old son & he never gets full
