Have you tried making your own dried apple rings? If you slice them in thin rings (after coring) and cook them at a low temp in the oven, they're really good. Toss with some lemon juice to keep them from discoloring and sprinkle with cinnamon before baking.
What about baggies filled with snack mix? Nuts, raisins, crunchy cereal clusters maybe? Roasted soynuts are also good in a mix like that and add protein.

Can I get some suggestions for snacks I could make to keep around so that my S.O. will eat more fruits, veggies, and nutrient-rich stuff?
And/or snacks I can send him to work with that will be easy to store and quick to munch in his lull time?
1) Must keep well for a week or so (so I can make a variety) 2) Must be tasty/appealing 3) Must not have to be "put together" or assembled (so he can grab and eat). 4) Must add some kind of health benefit to his diet (ie, fruit, veggie, protein, etc).
