Hi Brandy, I don't know if it was the chiken sate/ponzu sauce recipe you were looking for, but here it is! I got it off of the sparkpeople recipes page.
I used lemon instead of lime juice and it was still very tasty.

Chicken Sate with Ponzu Sauce Poultry
To prevent wooden skewers from burning while grilling, soak for 30 minutes in hot water beforehand. Total time: 30 minutes.

Ingredients
4 (6-ounce) skinless, boneless chicken breast halves 1/4 cup packed light brown sugar 1/4 cup sake (rice wine) 1/4 cup rice vinegar 1/4 cup fresh lime juice 2 teaspoons low-sodium soy sauce 1 teaspoon dark sesame oil 1/4 teaspoon crushed red pepper 1 garlic clove, minced Cooking spray
Directions Prepare grill. Cut each chicken breast half lengthwise into 4 strips. Combine sugar and remaining ingredients except cooking spray in a small bowl; stir until sugar dissolves. Combine half of sake mixture and all of chicken in a large bowl. Let stand 10 minutes. Reserve remaining sake mixture. Drain chicken, discarding marinade. Thread 1 chicken strip onto each of 16 (8-inch) skewers. Place chicken on grill rack coated with cooking spray; grill 2 minutes on each side or until done. Serve with remaining sake mixture. Yield: 4 servings (serving size: 4 skewers and about 1 1/2 tablespoons sake mixture)

I've been eating raw spinach most of this week and I thought I'd switched it up today. I took two strips of bacon, chopped and fried it until lightly brown in a non-stick skillet. I drained the rendered fat and over a low heat, tossed a finely chopped clove of garlic. I cooked the garlic for a minute, just to take the sharp taste out. I then turned off the heat and tossed the entire bag of fresh baby spinach. I gave it a good toss with a pair on tongs and put a lid on it. The residual heat wilted the spinach a little, but wasn't hot enough to cook away all the vitamins.
The entire bag of spinach is about 50 calories (and tons of potassium and other vitamins), one clove of garlic has 5 calories and two medium sized strips of bacon have about 100 calories. Delicious alone or on top of brown rice. If your calorie intake allows it, add more bacon!

I made the chicken sate in ponzu sauce last night and wanted to share how quick and easy it was! It only had to marinate 10 minutes and was light and refreshing on a hot, muggy day. I highly reccommend it!
