Try the chicken bruchetta recipe. It was one i planned on submitting. It is delicious. I just don't put cheese. I top the chicken with traditional bruchetta topping which is diced tomatoes, fresh garlic and fresh basil. It is so yummy and a little less fat and calories.

I just added a new recipe for Grilled Bruschetta Chicken but I made a boo-boo in entering the nutrition information which makes it look as if this is very hight in fat, calories and salt. The recipe is for 4 servings and NOT the one serving as listed. I did include the correct nutrition info in the actual recipe so ignore the boxed nutrition recipe. This is my first attempt at adding a recipe and I couldn't figure out how to put the ingredients in correctly to get the proper nutrition info.
My husband made this last night for dinner and he used veggies from our garden and omitted the tomato vinaigrette dressing and he used shredded low fat cheddar cheese in place of the mozzarella cheese. He also used the George Forman grill for faster prep time. It was delicious!
