| My family is hard to cook for. We have 7 people in our house ranging in ages from 2 to 86 and each person can be pretty particular about what they eat. No one but me really likes zucchini (unless its fried lol) but if I cut it small enough, they may eat it. What I was wondering is, would it be good do you think with like penne noodles as more of a casserole? My dad is on the atkins diet and they don't make low card lasanga noodles, at least that I have found here. But maybe add a little chicken or something too, anyone tried anything like this or have any other ideas? It is so hard to get any variety in this house without making at least 2 different meals or at least a different variation of the main dish for people with picky tastebuds or diet restrictions. Thanks for any suggestions!
