Hi there,I just got back from church and discovered your post.I didn't know that Sarajevo hadn't fully recovered, grocery products I mean. I have made whole wheat pie crust before and it wasn't for me.I'd much rather make a cobbler with oats, whole wheat, butter and brown or raw sugar.Honey would be a good alternative. I believe recipeZaar,I should get royalities, has recipes for cottage cheese. I hope you had thick sliced bologne on the grill which is one of my favorites. My Grandmother used to have a hand griinder and make bologne salad with, mayo, sweet pickle relish and a touch of mustard. You know we are terrably spoiled in America. I would like to suggest recipes, ideas and techniques with you if you wish. I'm disabled and the computer is my joy.Cooking is my passion, you may have guessed..lol. Carefull with the cheese on the diet.Use only as a flaver inhanser OR CHEAT and have chedder soup...yum. By the way,the sugar in the sauce is for disgestation because of the acidity of the tomatoes. If you can spare just a little go for it.1/4 cup or a small hand for a gal.of sauce. It dosen't matter when it's added. Make some whole wheat noodles for some of the left over pasta. Its very easy to make.Ya don't even need a mixer.Well, maybe Gods mixer, thats a hand to the layman..lol. I'll peck at you later...good cookin...Chef Jim

Hi, I'm located in Eastern Europe, Sarajevo, BiH.....the war has ended by the way. I'll be sure to check the recipe for faux Jiffy although sometimes everything I buy is a bit funky. The first time I bought flour I kept checking the bags, the smell, the feel, etc and when I got home and opened it, it was whole wheat flour.......which would be good for me now that I"m not eating white flour but when I had guests coming and I was baking a pie, it was not ideal.
I was craving cottage cheese and finally found it yesterday. I had it one other time since we arrived and it was different but good. Not low fat but you do what you've got to do. Cheddar cheese is another biggie, not here! We were in Belgrade last weekend for the Rolling Stones concert and we stopped at a huge food store and they had cheddar cheese so we bought the entire piece. Actually, my husband found it and was so proud of himself.
My husband is quite funny, he found a tube of what he told me was hamburger..........already packaged in a green wrapper with a cow picture on the front. He heated the grill and told me to make hamburger patties from the meat. Well, I about died laughing when I opened it and it was some type of bologna?? Not sure what it was but really doubted that he had bought the right thing.
I have been cooking the pasta sauce most of the day and the smell is absolutely wonderful. We're just about to the point of preparing the rest of the meal so I'll let you know how it turns out. The odd thing is that even without adding sugar the sauce tastes very sweet. I guess it was worth it to get the best Tomatoes they sold in the market.
Bye

Hi there,I did't know you were not in the states.Where Ya at? By the way,woa there, hold the pepermint in the spag.sauce thought.got any basil and or oregano with a pinch of tyme.Maybe lots of roasted garlic, chopped. Peppermint is best used in salads or as a salad on it's own if you got a lot of it,deserts or my favorite a rum mohito..lol. In recipieZaar I just happen to notice a copycat recipie for your own Jiffy Mix recipe.Just type that in the search box and snub the old grocier..lol. recipeZaar is a copycat type site with thousands of copycat recipies like the salad dressing at Olive Garden or doughnuts at Crispy Cream.Give the site a look.Ask about 10 kilos of tomatoes, make one heck of a blody mary..lol :) Wishing you and yours a good evening...Chef Jim

I absolutely love Jiffy cornbread and if I could purchase it I would. I live in an area that convenience foods are not easily available.
For example, now I've just purchased ten kilos of Tomatoes and am making homemade spaghetti sauce. If I lived in the US I would just buy it and be happy with it but when you don't have a big choice it's make it. Barillo does have a few varieties of sauce but it's expensive and not sure about the sugar content.
Thanks, maybe I'll add some peppermint to my sauce.

I was just adding a new subject when I saw your thread. All cornbread is healthy due to the fact cornmeal is a whole grain, endosperm, fiber and all. Some health snobs will disagree but go get a box of Jiffy Mix and be happy. There should be a recipe on the cornmeal bag. Now there are of course additions which are easily purchased at any health food store and keep well in the fridge. A couple tbls. oat or wheat bran are a good addition. As is edible yeast, raw wheat germ, soy lechethen..etc.I put all these in my light, honey wheat every day bread. When you feel like finding a cornbread recipe to mimick cause there aren't any orginal recipies anymore unless you add chocolate, chrushed up pepermint chips or something..lol,a little cooking houmor, very little..lol.Go to recipeZaar.com..Easy registration.Click on cornbread recipes..search and you will get 892 hits.Am I Karnak the magician,NO.I just slid over and checked for you.. :) ...cood cookin...Chef Jim

Any good ones?

The cornbread that I found in the store that is good for you is whole wheat corn bread. It tastes delicious and since its whole wheat you still get the benefits from that ^_^

I like your tip for making your own buttermilk. I don't keep buttermilk on hand and wouldn't use up the entire carton before it went bad even if I did keep it on hand.

It is NOT good for you if you are still using margarine with trans fats or partially hydrogenated oils so choose carefully. Labels can be VERY tricky! Manufacturers are replacing the bad trans fats with saturated fats also. To improve this recipe even more, try using Smart Balance Light tub or even canola oil. Splenda works great as a replacement for the sugar. And make your own buttermilk using a tsp. of lemon juice in skim milk to save a few more calories!
