Egg whites VS Whole egg in recipe..

All suggestions sounded wonderful. I have one to add for this or other recipes. My husband is on a low cholesterol diet - so no eggs for him. However I have been able to "treat" him with my version which I call:
Egg Scrambles
2 egg whites
1/4c Egg Beaters
Pepper to taste
Beat together & cook in pan sprayed with pam as you would scrambled eggs.
He hated Egg Beaters by themselves, said they didn't taste right, but he loves these. So he gets the health benefit from the real egg whites and the color, flavor and richness from the Egg Beaters without the guilt.

Of course you can only use egg whites.put a tiny bit of water in the whites and beat it to mix till frothy.
The purpose of the whole egg is to add richness from the yolk on the palet.Mouthfeel is the term used.
Egg yolk is almost pur fat and has no purpose in a diet.
Use 2 med. whites for 1 whole egg in recipes.
If you are going to fry anything in butter you may as well eat egg yolks.
Preheat oven to recipe temp.375*,saute breast on the stove top in olive oil till browned on both sides.Put a little of your spag.sauce in the bottom of a baking dish.Spread a little sauce on chicken breast,add mozz. and parm,1 tbl. parm.ea. breast, on top.Bake till cheese is lightly browned 35/45 min.Chop some flat leaf parsley and garnish,sprinkle, over chicken.I don't do parsley so it's definately optional.Whole sprigs of parsley placed on dish is a nice addition...good cookin...Chef Jim

I just made some chicken tenders tonight.. I sprayed pam on the pan, took egg beaters, mixed some skim milk and some spices in the eggs, put the chicken in that, then mixed it in some bread crumbs, after all the chicken was coated, I then sprayed the chicken with pam. Cooked until it was done. The topping wasn't crunchy, so I broiled it for a little bit until the topping was crunchy.

Then you can heat the speghetti sauce on the stove, then place the sauce on the chicken when it's done.

I did make this using just egg whites and then baked it in the oven at 350 degrees for about 20 minutes with just some pan spray and no butter, it was delicous!

I'm not sure about egg whites, but I know that egg substitute tends to work well.

I found this recipe for chicken parm, and it calls for whole eggs to help the breading stick to it. Would it work to just use egg whites?

Also you are supposed to 'fry' it on stove top in the butter, how do you think it would taste just baked in the oven with the breading and no butter?

4 skinless, boneless chicken breast halves
1 large egg, lightly beaten
1/2 cup Italian-seasoned breadcrumbs
2 tablespoons butter or margarine, melted
1 3/4 cups spaghetti sauce
1/2 cup (2 oz.) shredded mozzarella cheese
1 tablespoon grated parmesan cheese
1/4 cup chopped fresh parsley
