AS for a low cal frosting for these, I like to use chocolate Cool Whip. These are very good and when I make them I usually send 1/2 home with my daughter. Otherwise - well you know what would happen.

WOW! I assume you could also use a spice cake mix too. Can't wait to trick the kids and my own tastebuds!!

This is also a great ide for me because I like to leave some ingredients at the cottage that I can whip up on short notice. I never have enough eggs when we go up only for the weekend. This way I can just lay in a supply of canned pumpkin in the pantry and I'm set!

Hi,

Make sure you bake it enough. Only when it is undercooked will you ever taste the pumpkin.

Does it taste anything like pumpkin? I cannot stand the taste of it.. but, if there's no pumpkin taste, I'm all for it.

That sounds yummy!! I just made cupcakes tonight that I found from weight watchers. I took the Pillsbury chocolate cupcake mix and added 1 can of diet coke and cooked them. That was it! They came out just as good as the real deal..but I didnt feel as guily eating them! For white cakes, use 7UP or Sprite!

I wanted to share my favorite recipe for something sweet, I love it! It's 137 calories (if you make 15 cupcakes) and tons of fiber and vitamins and it tastes wonderful- you won't believe it until you try it. You just mix 1 box of chocolate cake (any kind) with 1 regular can of pumpkin. It' really thick, so you have to stir it a lot. Just cook it as the box directs in a cupcake pan & papers. They come out so moist and it's so easy to make- just 2 ingredients! You really have to try it!
