| I'm converting to the McDougall way, that is sauteing in veggie broth instead of oil. Still flavourful but saves A LOT of calories from fat.

| It makes me wonder what oversight is conducted when recipes are reviewed and selected for posting. I'd ask, but I don't see any way to do that.

| I never use oil to saute vegetables...even when it's called for in a recipe. To me it's unnecessary. I always just lightly spray a non-stick pan. I even do this when I stir fry vegetables. It's never been a problem & it saves lots of fat & calories.

Shadow: I've not made this recipe yet. Nevertheless, your question is on point. With high quality cookware there is no need to use all of that oil. I'm going to skip it.

| The recipe calls for 1/4 cup oil to saute chopped onions. That seems like a lot of oil (and added fat & calories). Is there any reason the onion couldn't be cooked in a small amount of water or, if browning is desired, cooking spray?
