JackieM2 thanks for the pointer...I'm the one that submitted the recipe to SP so I really appreciate the feedback.
I normally don't use the paper muffin cups because I find it easier just to spray the muffin tin with cooking spray. I also pop these in the freezer once they cool too and find the paper is a mess for the kids to get off of the muffins.
But whatever works for you, great! I'm sure others will find your tip useful and helpful. I agree the flavor does develop once they are cooled overnight.

These muffins are really tasty. I used the paper muffin cups for even less fat and easy clean up. Although the paper tends to stick just a little bit to the bottom of the muffin after they have cooled off. If you leave them for at least 24 hours (if they last that long)the paper cups come off way easier and the flavour has a chance to really develop. Trust me!!
