I love the chicken cattitorre (bad spelling). Also really like the slow cooker chicken taco stew. I modify both to more fit our tastes. Like I add mushrooms to the first dish. Second dish I add brown rice.

My newest favorite aside from the cowboy chicken (really really good) is laughing cow chicken but I made it slightly differently.
Take a boneless skinless chicken breast and cut a pocket into it.
wrap 1 wedge of laughing cow cheese in 2 or 3 slices of deli ham. Tuck that into the chicken pocket.
When finished with all of your chicken place it on a parchement paper lined baking dish. Season with what ever type of seasoning you like. I enjoy hickory smoked salt. or Mrs Dash. Bake at 375 degrees until done, 45 min or so.
It is really very tasty and low calorie and great with salad or steamed veggies.
I am making it tonight with sauted zuccini and roasted butternut squash.

Another thing that is excellent is roasted veggies. It adds a completely different flavor.
Just wash and place them on a parchement lined cookie sheet. I like one with sides. spray with cooking spray, salt and pepper to taste and roast at 475 degrees for about 15 min.
Great for asparagus, broccoli, cauliflower, squash, tomatoes, You name it, it tastes better roasted.
You can also sprinkle a pinch of parmesan cheese over it just before it is done.
Clean up is simple because of the parchement paper.

I love the recipes for the crockpot. The Salsa Chicken and the Cream Cheese chicken are both excellent. I like being able to use them as a starting point and eating them different ways throughout the week.

I also like the ability to enter a favorite recipe and get it calculated for calories, etc. Then I can tweak it to lower the calories and fat. It's a great tool to use.
