I had never heard of claypot cooking before, and your recipe sounded healthy & delicious. I did some research and found a claypot chicken rice recipe on wikipedia:

| I like to do chicken and vegetables in my pot. I had heard that fish was wonderful from the pot, and yes, it was good. But the cleanup! Yuck...will stick more to the veggies.....

| Let me know how it comes out for you. I will tell you about other dishes I make........an important part is to soak the pots before using them and to put the pot in the oven while it is still cold.... a new idea for most of us. Good energy for your continued weighyt loss.........looks like you are doing great!!

Hi..the pot is called Romantopkf and nthere were directions on a fold over sheet with the pot. I would think they could be purchased at a kitchen store. Try ebay or Amazon first and see if anything comes up. I also would call around before running around. Good luck

Today I used a clay pot for the first time and was thrilled with the outcome. I did the following layering after soaking the top and bottom for 15 minutes in water (so the juices would come from the pot): carrots, salmon, more carrots, brussel sprouts, mushrooms and fresh garlic pieces. I then mixed together orange juice, wine vinegar, rice vinegar, dark mustard and poured it over the fish and veggies. Covered the pot and put it in a cold over. Set the heat at 400 and left it in over for 20 minutes. The house smelled fantastic and the food tasted wonderful. I will definitely use this pot for cooking other foods (chicken is supposed to be great cooked this way). Potatoes added to this dish would have worked well (but I didn't have any). I served with some quinoa which I had cooked previously. Hope this helps some folks.
