There are two basic kinds of salad eaters: those who focus on aesthetics and those who focus on function. Those who favor aesthetics artfully slice pepper rings, scatter on dried cranberries and toss chunks of chicken atop large leafy pieces of greens. Each item is carefully placed on their canvas of greens. Theirs is a knife-and-fork salad, one that could grace any restaurant menu.

The functional salad carpenters chop lettuce into bite-size pieces, toss on chopped vegetables and shred their protein into forkable bits. Theirs is meant to be eaten not admired.

    My favorite salad is organic shaved radishes and carrots, mixed greens, mandarin oranges, chicken, and raspberries, alfalfa sprouts and sunflower seeds. With a raspberry vinaigrette.     This is my favorite salad:
    salad greens, slices of granny smith apples, Trader Joe's Sweet and Spicy Pecans, and Trader Joe's Balsamic Vinaigrette.

    If I were making it just for me, I use about 1.5 cups of greens, half an apple, a heaping teaspoonful of pecans, and 2 Tbsp of vinaigrette. It's a good salad for company, too. - 4/4/2009   11:40:01 PM

    My salads are quick, cost effective & easy. That said, I wouldn't mind making them a little more cost effective with this gadget.

    Every day for lunch I tear open a bag of pre-made salad and top it off with tuna or salmon from a pouch, boiled egg whites, celery and/or green peppers. For dressing I use a little lemon juice and salt-free lemon pepper (like Mrs. Dash). I love paying less than $3 for a huge, healthy salad as opposed to going to a restaurant and paying $7 or more for a less filling salad. Thanks for the contest! - 4/4/2009   10:09:31 PM

    I love to bake chicken breasts with basial, garlic salt, pepper and a little rosemary then chop it up and put it in my salad with lettuce, carrots, onions, green peppers, (sometimes hard boiled eggs diced up) cheese, and fresh ground pepper with balsamic vinegarette dressing....soooo good! - 4/4/2009   9:08:30 PM

    My favorite salad lately consists of 2.5 cups of organic spinach, half a cup of baked, chilled beets, 2 tablespoons of feta cheese, 2 tablespoons of garbanzo beans, 1 tablespoon of sunflower seeds.

    My favorite is a mix of spring greens, iceberg lettuce, red and green leaf lettuce, sliced cucumbers, sliced radishes, chopped carrots, chopped celery, a few thin slices of red delicious apple (peel on). Top it off with about 5 oz. of grilled blackened salmon and a couple of tbsps crumbled blue cheese. Add fat free catalina salad dressing (just enough to moisten).     I love all of the above! LOL I always start with either the baby greens or romaine, then just add whatever is in the frig. I like to add a hard boiled egg and low sodium turkey to mine and some sunflower seeds for protein. I use fat free dressing and a large salad gets be through 2 breaks at work.     We love a marinated salad. Cauliflower, broccoli, red onion rings, cherry tomatoes, mushrooms, black and/or green olives, sliced water chestnuts.     Who in SP does not enjoy a Salad? That is my mainstay meal.
    Usually Mixed Lettuce (that has bits of carrots and cabbage too), but I do enjoy Romaine, Spinach and I've done Kale as well.
    I sometimes mix broccolli, aspargus, or green beans.. what ever I have handy....and sometimes they are thrown in after they have been 'nuked'
    Cherry tomatoes (sliced in half) and I have chicken that I have season with a little hot pepper. Yummy!
    Some times I'll add parmesan cheese and depending the wetness of my salad I may use dressing or not..
    I enjoy my big salads and I like variety...everyday its an adventure.

    Going out to eat I have enjoyed a salad that had the dried cranberries and toasted pecans, a little blue cheese and the fancy greens. Delicious.

    I use fresh lettuce chopped up, chopped fresh spinach, Tomatoes cut up, fresh strawberries, reduced-fat blue cheese, cooked lean steak cut into small thin slices. Cucumber, carrots sliced julienne style, tossed with a few sliced almonds(sometimes I use pine nuts) toss together with Kraft light Raspberry Vingerette.     I like to take some lean pork chops or chicken breast, cut into bite sized pieces and place in a ziploc bag with about half a packet of low sodium taco seasoning and shake then spray a pan with olive oil pam and saute the meat until done. I make my salad from iceberg, romaine and spinach, chopped onion, cucumbers, red peppers, green peppers, broccoli and tomatoes. I warm some black beans and place over the greens, add the meat, sprinkle lowfat cheddar over that and slice an avocado or add a spoon of wholly guacamole. I make hidden valley fiesta ranch dip mix with lowfat sour cream but thin it with 1% milk for our dressing . If we have some baked tostito chips around, I'll crumble about 4 on each salad.     NURSE19861 beat me to the Broccoli Salad, so I guess I would do the same thing except substitute Califlower for the Broccoli (or add it to it) and some torn Romaine Lettuce, and frozen Green Peas.     My latest fave is a mediteranian carrot salad. Consists of grated carrots, freshly squezzed orange and lime juice, olive oil, cinnamon: all tossed together.     One of the salads we enjoy is this one.
    For every cup of spinach
    Mix together - 1 hard boiled egg
    1 Tb. chopped onion
    1 Tb. low fat mayo
    and 1/3 cup of low fat cottage cheese

    My favorite is butter-mix or Italian-mix lettuce, with miso dressing in a small cup on the side, feta cheese, glazed walnuts, cherry tomatoes, sometimes a couple of raisins and if it's for dinner, grilled chicken sliced up into bites. I eat it with chopsticks so I can get exactly what I want in a bite, and dip the tiniest edge into the dressing for flavor.
