    lots of good recipes.There is no reason for high fat and salty mexican food.I eat a lot of mexican food and find that making it at home is safer and costs a lot less.Last night fixed chic.enchiladas,gr.beef tacos,homemade frijoles,rice and guacamole,it was good.Sunday for me is weigh in day but will not get upset with a small weight gain will lose it this week.Good weather here today so will get in some gardening.     I'm Mexican American and don't really celebrate this holiday ;-) I always try to make some sort of Mexican food for dinner that day at least though. This year not so much since are in the middle of moving. I look forward to trying some of these recipes though.     The pico de gallo is a favourite..since i make this at home here in the caribbean
    adding Avocado and Cucumber...simple very tasty..we call it... Pickled Pear and
