    Love the salad. I printed it out, but I will substitute pecans for the walnuts. I cook lentils and rice all the time. On a sandwich, substitute spinach for the lettuce. It's great. - 8/4/2011   10:55:47 AM

    I make a very similar curried lentil soup. It is really yummy and it freezes well. I usually make a big batch eat if for a day or two and freeze the rest in single servings for nights when I need something good and quick. - 8/3/2011   9:00:34 AM

    I love walnuts but can no longer eat nuts, sadly. Does anyone have any suggestions for workable substitutions for nuts and seeds? So many of these recipes feature them as major ingredients and I'm not sure how well they'd work without a substitute. (In my case, flax, sunflower seeds and almost all nuts are off limits. I love them but get hives.)

    These recipes all sound great. Love all these ingredients: spinach, walnuts and lentils... Hmm, I'm thinking a power combo dish of all three? We put spinach in our homemade lentil soup, so maybe I'll sprinkle a spoonful of chopped walnuts on top before serving.
