One of my all time favorite vegetables to cook with is peppers. Peppers are easy to find and affordable. They are also a great source of Folate, Magnesium, Copper, Fiber, Vitamin A, Vitamin C, Vitamin K, Vitamin B6, and Potassium. Here are 13 recipes from SparkRecipes that will boost the nutritional value and flavor of your dishes.

    Sauteed peppers (yellow, red, orange - 1 each), red onion and fresh garlic on a whole wheat pizza crust. No sauce. Little Italian seasoning. Cover with roma tomatos. Small amount of mozz and parm cheese. When done, top with some banana peppers and home-made salsa or red pepper (powder) for a little zing. A-maz-ing. Can't do the green peppers tho - rips me up.     I HATE HATE HATE........ bell peppers. For me they ruin any food they come in contact with. I once sent a pizza back that had been cooked with peppers. All they did was pull them off and send us back the same pizza. Not only did I skip that pizza (my dinner) because the oils were all over it, I never went back to that restaurant. I sure wish they tasted good to me, it's a big pain IF I want processed food. Glad I'm trying to eat less processed foods by cooking more food. - 10/6/2011   4:17:48 AM
